what to do with pork

I have bout 4 pork joints in my freezer not sure why. Have just taken out one massive one and will be able to feed dd and I on the left overs for the wwek so I need a few good recipes for the week. and some insperation to use up the rest in the freezer. dd not keen on the sweetness of somerset pork or apple and cider with pork so alternatives need.

will be out most the day tomorrow so it will be in the slow cooker.

I tend to chop up my left over meat and make a chilli or taccos so that is one meal taken care of. do people get a week out of cooked meats?

How long does every one else keep cooked meat? I tend to not use past wednesday if cooked sunday.

I was about to post a similar question - I have a large piece of leftover pork. I was hoping someone out there has some ideas for family meals.

well mine has just gone in the slow cooker with celeriac and honey, so will be having that for supper with the celeriac mashed. As it is going to be sweet I may do a chinesse special fried rice type thing with it tomorrow night and the taccos tuesday.

Curry? Cook vegetables and make a pie? Shred and add to clear soup with Chinese vegetables? Finely chop with vegetables and potatoes and make pasties?
Would certainly never throw anything away - you can cook it through well in gravy/mushroom sauce/curry sauce etc and freeze it.

I have chopped up some roast pork, added some part cooked parsnips and carrots stirred in with cream and herbs, and covered it in ready roll puff pastry ready for a pie tomorrow.

You can always take off some decent slices and put into a tub/takeaway box, for a "quick roast" another day, keep some gravy and just reheat the sliced meat in the gravy.

For christmas leftovers I make a pie, chop any turkey, ham and pork, layer over a puff pastry base, make a really thick sauce or use creme fraiche to cover the meat. I usually put stilton in among the meat too if it is the christmas off cuts.

Cover the lot with another bit of pastry and bake in the oven. Maybe for pork a mustard or parsley sauce and some mushrooms??

When it's been slow-cooked pork, have crisped up the bits in the oven and then had in a sandwich with shredded spring onion, cucumber and hoisin sauce, or you could use pancakes.

I marinate the old bits in char sui sauce then add to fried rice with veg and egg etc. My DC love this.

Rissoles-put pork in a mincer or blender, mix with mashed spuds, an egg and some herbs then shallow fry.

I think Hugh Fearnley-whats-it has a recipe for left over pork- worth looking online.

you can keep cooked meat for about 3-4 days in a cold fridge.

I won't use cooked meat more than 3 days old - so same as you, if cooked Sunday, eaten by Friday.
One idea for a raw joint - River Cafe do a fab and simple recipe for pork cooked in milk, sounds yuk, looks grim but tastes divine.

Cut meat into chunks and marinade in BBQ sauce. Thread on skewers with peppers, onion, mushroom. Grill about 20 mins, turning halfway. You can vary the marinade (teriyaki, honey & mustard etc.) and the veg.

My dh's favourite dinner is pork which has been marinaded in; 2 tbsp glucose syrup, 2tbsp light soy sauce, 1/2 tsp chinese 5 spice and a dash of sesame oil all mixed together and coated onto the pork. I usually grill or roast this.

Sweat some onions and stir in some flour then op pork in with a litre of apple juice and a double handful of prunes, cook covered for 30 mins then uncovered to reduce to a thick casserole. Also works well with apricots.

Yum.
