How can I cook some nice cod & haddock without using dairy products?

We have some fresh cod and haddock in the freezer (bit of a fish virgin though and can't tell them apart!! Blush so will probably cook them both together) was thinking of a fish pie but I can't eat dairy and any recipes I find seem to have heaps of butter or milk in. Could I do something else other than pie? Make them into fishcakes maybe?

Any suggestions appreciated, thanks.

You could put them on in a greaseproof parcel with a little bit of lemon juice and some herbs then bake in the oven for 20 minutes.

Fishcakes nice and simple just cook the fish then flake it and mix with equal amounts of mashed potato and some parsley then coat with breadcrumbs and oven bake til crisp.

Just had lemon sole for lunch poached simply and gently in a pan for 10 minutes in a light vegetable stock, lemon juice and white wine with a few herbs and seasoning. Reduce the stock right down to make a sauce.

Served with boiled potato and a nice fresh green veg. Glass of chilled white wine on the side was nice too. Grin

You could do your own fish & chips - make a beer based batter with flour/egg/lager, coat the fish and fry.

You could do a tomato based fish pie - think mediterranean flavours, olives, peppers, capers, canned toms etc.

You could make a Kedgiree with rice/eggs etc.
