Veg box glut ... and stuck in a rut

Help - I need inspiration! I have a mountain of veg in my fridge, as a result of a stressful week when I've run to the takeaway more often than is sensible. Here's what I've got - what would you do with it?

Two savoy cabbages Blush
Quarter of a red cabbage
Half a swede
3 beetroot - getting old and going a bit soft
A bunch of chard
3 onions
2 parsnips
Handful of carrots
A dozen Jerusalem artichokes
Half a dozen potatoes

The next box doesn't come for a week and I can always cancel it, so there's time to use it all up. I'm just a bit bored of all the stuff I usually do and looking for ideas. Particularly for the cabbages, that need to be hidden from my fussy 9yo if I'm going to have any hope of getting them down her Grin.

I know what you mean - beetroot are nearly always left lurking at the bottom of my fridge. I usually bung everything into a soup but with what you've got it might be a very unappetising colour.
Bubble & squeak is a hit with my DS - you could mash up all the root veg & you might get away with the cabbage if it's chopped up small.
There's a Swiss chard, onion & gruyere tart recipe on BBCGoodFood website that's nice (although I confess my gruyere looks suspiciously like Cheddar)
That still leaves the beetroot but I can't help there - I'm stuck with my own

Crispy seaweed with the cabbage - its basically deep fried cabbage with sugar.
Make pasties using the swede onion potatoes and some meat- assuming you are not vegetarians.
I hate beetroot so no help there.
Make soup with the Jerusalem artichokes and some of the potatoes.

Actually, that's got to be worth a try, if only to freak out my pink-hating daughter Grin.

Pasties is a good idea - will do some of those tonight. DH hates bubble and squeak which is a complete pain, because I grew up on it and would have it every night if I could!

Didn't know you could use cabbage for crispy seaweed - have tried it with kale. Might give that a whirl.

Gordon Ramsey's Jerulsalem Artichoke Risotto with Scallops

I made it with King Oyster Mushrooms rather than scallops - it's a lovely thing to eat.

I always end up doing a warm salad with beetroot, Beetroot, greenbeans, I do my own dressing with wholegrain mustard. It's simple but yum.

Beetroot soup with feta sprinkled on top is yum.

I'd roast the swede and parsnips with some honey / maple syrup and make soup or put sausages with them.

Stewed red cabbage on the side, or turn into coleslaw. The carrots could go in any of those things.

Get a ham hock and make the ham hock / savoy cabbage soup from the Leon book with one cabbage. That has potatoes and carrots in too.

Make a vat of minestrone with the other.

Throw the jerusalem artichokes away. They are the devils work.

That's basically what we eat all winter, with the odd sprout surprise thrown in.

Nigel Slater's Beetroot and Poppy Seed cake is fabulous - Google will take you to the recipe. It's a bit of a faff but freezes wonderfully and seems a very WORTHY cake while being delish...

Roast beetroot is fab. Agree about beetroot soup with feta too.

Sounds like a lot of veg soup to me, and maybe a curry. Freeze some of the soup.

You are all amazing! OK - beetroot bread is in the breadmaker. I know that's cheating, but it's that or nothing. Have had noodles stir fried with chard for lunch. Like the sound of beetroot soup with feta and also cabbage and ham hock soup.

Lol at satanic jerusalem artichokes. We have them growing in the garden - kicked myself when I discovered they were in the veg box too. Must make a note to check contents next week and not just let them send default box!

Update - beetroot bread is weird - but in a nice way - and the rest of the family think I'm bonkers. Am going to have it for my packed lunch tomorrow and blow my colleagues' minds with my bright pink sandwiches Xmas Grin.

I make red cabbage in balsamic vinegar. not a pickle, but served warm as a veg. I always do the whole cabbage as it freezes well.

Beetroot and chocolate cake is wonderful! Not sure where the recipe is, but it's wonderfully moist (and amazes the dc that they can't find the beetroot that they know went in)

Who knew that beetroot was so versatile!

Will try the spicy bean soup as well - sound yummy.
