Slow cooking without a slow cooker

Possibly a silly question but what temp should I set my oven at, in order to casserole duck for 8 hours? It's an electric oven.

Hi, I can answer this, it's 90 degrees for a fan oven, I have a Hotpoint fan oven, and there is a (s) standing for slow cooking at the 90 degree mark.

Xmas Blush thought you meant the equivalent of a slow cooker to an oven, I've never cooked duck, but 90 degrees is the same as slow cooking, if that helps.

Thanks, Jenni! I guessed at 100 and it's not a fan oven, but I'm going to write down your advice so I don't forget. For the record, duck cooked for about 4 hours at 100 degrees, in orange juice with peppercorns, a bay leaf, rosemary, a dollop of redcurrant jelly, half an onion, one clove or garlic and a bit of ginger is utterly delicious.

fan ovens can always run at a slightly lower temp than non-fan, so your 100C is probably about right. You have to bring it to simmer on the hob before it goes in the oven, though, or food poisoning might develop while it's slowly warming up.

Thanks for the tip re. simmering, PigletJohn. I did that, but more by luck than judgement! I will make sure I adopt that as 'procedure' though. Thank you.
