My mum has dibetes, but loves cake, especially my banana and cinnamon loaf, but I really dont like her having any as the sugar in it.

Anyone use anything instead of sugar, something suitable for my mum?

TIA

www.babyledweaning.com/recipes/snacks/frannys-fab-and-healthy-banana-cake/ that's frannyandzooey's recipe, no sugar in it. obv tastes nicer (ie sweeter) the squashier the bananas are, though...

Ive used less sugar and maple syrup, but that's full of suar, so sorry can't be any more helpful. Good luck.

and it's not a cakey loaf, if anything more dumplingy in texture but honestly really, really nice.

My diabetes doc said to use Xylitol (available in the supermarket under I think the name naturally sweet or something like that)... it doesn't raise blood sugar like 'proper' sugar does.

Dates are v sweet, you will probably have to up the raising agent to cope with their density though...

You don't actually need to substitute the sugar. Just tell your mum to have the cake after a regular meal rather than as a standalone. A regular meal of protein, carbohydrate and fat raises blood-sugars and the small amount of sugar in a slice of cake will not raise them much further. Eaten on its own it can generate more of a 'spike' which diabetics can't cope with so well.
