Christmas with gestational dabetes

This is my second pregnancy (that actually got to the 3rd trimester), my second with gestational diabetes (so far completely diet controlled) but my first where I am trying to plan Xmas both with pregnancy food restrictions and with a diabetic diet.

I cannot of course have any alcohol, shellfish, blue cheese, rare meat and so on. In addition, I can't have (very much) sugar or other carbs.

I am not complaining as I feel very lucky to have another chance at having a baby, and pleased not to be on insulin, but I am wondering how best to plan Xmas menus. A roast bird and veggies, maybe even a roast potato or 2 should be ok. Xmas pudding is likely to be a problem though. I had quite fancied making a Xmas cake and pudding with DC1 but I think we may leave that till next year. Mince pies are also likely to be off the menu, not a problem with shop bought ones which I don't like, but a bit sad to be refusing home made ones.

Oh and I am being very antisocial and limiting going-out-to-dinner occasions as a) I fall asleep at 7.30 and b) I would have to sit there watching everyone else get drunk and eat cake (while I propped my eyes open) and I do not think it would be much fun for me or I would be much fun for them!

I was thinking some sort of full fat but low sugar pannacotta might be a good Xmas day dessert, but I have not yet found a recipe. I am wondering whether some sort of creamy fruity trifle might be possible, but I might be deluding myself there.

Has anyone got any better ideas?

I filled up on the main course (turkey, veg - but not so many root veg as they are carby, pigs in blankets etc), so I didn't mind the lack of pudding.

However, how about really good quality chocolate mousse (h/m), can be very low-sugar per portion or you could use splenda.

grapes and pasturised cheese from a gorgeous cheeseboard?

you could make classy jellies with berries?
