Anyone bored enough to help me plan around the veg box?

I have the best of intentions but lack in the imagination department.

I have:

3 beetroot
3 massive (anaemic looking) tomatoes
shiitake mushrooms
4 sizeable turnips
1 savoy cabbage
bag of sprouts
1 fennel bulb.

So, er, borscht...and??

Southern fried chicken served with mash and the cabbage cooked with smoked bacon and onions. We're having this tonight.
Roasted tomato soup?
If they look anaemic they might be a bit tasteless so better roasted.

Ooh, quite a hard one! I always get stuck on beetroots and turnips, and never use up my cabbage in time.

I would do:

  • some kind of stir-fry using some of the cabbage and the shiitake. could add chicken or prawns or cashews, and do with noodles.
  • roast the fennel and the tomatoes as an accompaniment to oven-baked salmon.
  • could you chuck the turnips into a beef and root veg stew? and serve with the sprouts? Turnip mash is also nice and could be an accompaniment to something meaty
  • I serve sprouts or cabbage quite often with lentil and chorizo stew and potatoes
  • I only really like beetroots cooked, soaked in vinegar and served with salad and jacket potatoes. Or they are good in Beetroot and Chocolate cake if you fancy something sweet

you could do a kind of bubble and squeak with the sprouts/cabbage and the turnips

pasta with mushrroms cooked in garlic butter

shave the fennel and toss in a dressing made with orange juice, lemon and mustard, add chopped tomatoes at last minute

stir/flash fry sprouts, fennel and cabbage

roast fennel+ turnips with an onion + spices, roast beetroot separately and mix together, this might be nice topped with cheese and breadcrumbs and grilled

beetroot is nice grated in a mix bean salad

you could do a pearl barley tabouleh with fennel, beetroot and the tomato

Roasted beetroot is good as a side dish.

Stuffed tomatoes?
Turnip gratin?

Shitake mushrooms and shredded cabbage are good in stirfries or noodle dishes

My best advice is to cancel the veg box and start growing your own.

I used to get a veg box and cancelled it because of exactly the problem you are facing and because I could buy best quality in M&S. I eventually had a go at growing my own. I enjoy it more and it really is not hard.

Now to the veg box de jour.

Savoy cabbage, mushrooms, Slice fine and fry in plenty of butter. Fry pancetta separately and then put into the cabbage/mushroom mix and add a little white wine and plenty of black pepper and nutmeg. Reduce slightly. Boil some pasta and combine the whole lot with a parmesan on top. Serve in large bowls.

Fennel bulb. Shred fine with a little onion or shallot. Fry in butter along with rissoto rice and then make risotto with chicken stock and black pepper in the usual way. Right at the end add a good glass of vodka and plenty of grated parmesan and seve immeditely with parmesan and black pepper on the table.

Tomato. Liquidise, Freeze and use in spag bol with some tomato puree when you next make it.

Keep turnips until xmas in fridge and use in roasted veg with carrot, parsnip and herbs done in olive oil, herbs, black pepper and salt. See Delia recipe for winter roasted veg.

Sprouts. Wash, slice in half, dry thoroughly. Deep fry. Mix with chopped and toasted walnuts as a winter veg.

Beetroot. Bin them. Vilest veg on the planet.

This book is great for veg. box subscribers. It has chapters organized by every type of vegetable imaginable and lots of recipes for each one. Not just for vegetarians, obviously, and a great way to find recipes to use what you have available.

Can you cook up the beetroot then pop in the fridge to slice into sandwiches? They make a lovely hot salad with new potatoes, smoked mackerel and a dressing with a touch of horseradish. Or roasted to serve with meat, or risotto.

If your tomatoes aren't up to much then I would chop them into a tomotoa based dish that has timmed toms in it, otherwise they won't have much flavour.

Nigel slater has a lovely bean, bacon and cabbage stew that is very filling but does give you wind Blush. Or agree you should stir fry with the mushrooms

Can't help with the fennel, sprouts or turnips as they are horrible. I ended up cancelling my veg box as I always got sprouts, turnip and chard in the winter and ran out of things to make with them.

Oh, yes I have had beetroot in chcolate cake too! I think, (sparkle pls confirm) that you cook it until a mush then mix with the batter and it makes it ever so moist and scrummy. mmmm.

Otherwise I was going to suggest borscht.

DH adores beetroot in white sauce, but the overwhelming pinkness of it makes me feel sick

Whoops, I went and made beetroot chutney on an impulse and missed all these beetroot suggestions!

It's still on the stove, so not sure how it's going to turn out.

I can put some of the fennel in a spaghetti bol (done it before, it's good!) and I think the turnips will have to go in a beef stew as suggested.

Thanks for the book recommendation popbiscuit, I could do with something like that in my armoury!

well the beetroot chutney is gorgeous EXCEPT that the recipe called for 'ground cardamom' and I foolishly thought grinding with a pestle and mortar would suffice. No, every other mouthful you get a big bitter bit of cardamom Hmm.
