Anyone made their own sushi?

How did it turn out? Any tips?

I'm in the middle of it now, hoping it turns out well. I've been really wanting sushi for a couple days.

I've tried it a few times. Turned out OK - but not anywhere as good as the "real thing".

My only tips (not that helpful now as presumably you have finished!) are to cook the rice carefully and spread it out on a wooden board to cool, and to wet your hands with vinegar water before shaping.
Oh, and use decent fresh fish of course (tell fishmonger it's for sushi) and a very sharp knife!

It went ok actually. Tasted pretty good.

Will remember about spreading the rice out on a board to cool though! That would have been easier.

I've made it a few times. I think the trick is to get the right seasoning on the rice - mirin, rice vinegar maybe a little sake.

I've made it a lot and I find it just as good as the Real McCoy. I use a teaspoon of Dashi in the rice cooking water and then add a heated combination of rice vinegar and sugar to the rice as it is cooling. Rather than spreading it out, I prefer to fold it over gently in a large bowl and fan at the same time. Keep a wet cloth over the bowl afterwards so that your sushi rice is cool and sticky and doesn't dry out.

I mostly do California Rolls either with the Nori on the outside or the rice on the outside. Favourite filling is smoked salmon, avocado slices and a little spring onion. Lovely!!!

Just saw this. Some tips to make sushi at home:

  • buy the freshest fish possible
  • freeze the fish for a couple hours then thaw
  • with a very sharp knife, slice the fish relatively thinly against the grain
  • if using a cut like mackerel, lightly pickle it prior to slicing
  • make the rice (short grain "sushi" rice) and empty into a wooden bowel. Season the rice well with rice wine vinegar, a bit of sugar and sake

The guardian have a video clip of how to make sushi at home currently which is quite good.
