Cakes for school Xmas fair

We have been told asked to send in some cakes on Monday for DS2's Xmas fair. I am thinking of making some chocolate muffins as its about the only thing I can make that always comes out ok and they don't need decorating Problem is that I have silicone muffin trays and so don't use paper cases. It is ok to send in cakes which aren't in cases? I can put them in a big box, just wondering about hygiene if someone has to put them out. I know schools can be fussy about things like this.

I use disposable tray bake tin from lakeland and Mary berry tray bake recipe. Works a treat! Quick, easy and tasty!

D'oh - why didn't I think of that! Problem solved.

I am interested in the Mary Berry tray bake idea for future - where can I find the recipe? A lakeland has just opened near to us so I can get some disposable trays quite easily. Just don't fancy going near a shopping centre this weekend.

Do you have to make them? I have been known to get some from Tesco, take all the wrappers off and put them on the paper plate supplied. Grin

Envy at all the Mums doing it properly.
