do you make all your own bread? without a breadmaker?

am looking for hints and tips!
i can make a perfectly good loaf, but not sure about making all of our bread myself.
can i leave it to rise overnight?

I always use dried active yeast or fresh yeast if I can get hold of it.
prefer the taste, especially with sweet doughs.
but agree with beta that easy yeast or fast action yeast is easier in the beginning.

Deafworm - its super isn't it. Very satisfying and guests are ever so impressed by home made bread. Grin

I remember when I first started making bread it seemed so daunting but am a coeliac so I had no option as I use special gluten free flour. Once I got going with a breaadmaker I then started making it for my family and then finally got brave enough to make it by hand.
