Need yummy dinner idea using mince please!

I've got lots of beef mince to use up but don't want to make shepherds pie or lasagne. Ideas please!

Make your own burgers or meatballs? Spaghetti bolognese, meatloaf. I love my own burgers and you can put in whatever flavourings you want.

You might have to come up with a different name, but I have a fab recipe for faggots using mince beef that is really lovely. All cooked slowly in a lovely beer and onion gravy. I promise you that it's delish and the sum is definitely greater than the parts. Let me know if you are brave enough and I'll post the recipe Wink.

tacos are yummy, but my fave is to cook mince and chopped onions slowly in the oven for about 40 mins with a little tom puree and a generous tablespoon of morroccan seasoning. Then serve it with seasoned couscous peppers and houmous 'tis lush.

I also use mince to make fried rice with malaysian stir fry paste, also yummy and good value. Grin

It's meatballs that contain mince, onions, parsley and rice and you boil them in broth (or water) and then enrich the liquid with a lemon and egg mix, that's lemony and creamy. Dill gives it a lovely aroma. I could live on the stuff...

Moroccan dishes can be nice with mince beef made as simple as kofta kebabs or moroccan stews. Loads of internet recipes for those.

If you fancy something a little more adventurous try bobotie which is a South African dish.

fry and mix with rice to stuff peppers/tomatoes/mushrooms

fry with garlic/onion/soy/mushrooms/bamboo shoots/chopped water chestnuts (and for true authenticity you need to add some toasted rice that has been ground). Can add chilli too if you like it.

Eat by putting spoonfuls in whole icebery lettuce leaves and wrapping into little parcels. Yum.

Courgettes cannelloni;
prep the mince as for bolognese, best done day before
cut courgettes lengthways skin on, lightly brush with olive oil and grill
Use lasagne sheets, par boiled and cooled
on each lasagne sheet layer two slices of courgettes and bolognese mix
Roll and place in ovenproof dish, repeat process, finish with a white sauce and little bolognese sauce, grated mozzarella, enjoy, it is delicious and it's a good twist on good old lasagne.
Same can be done with aubergines, same process.Smile

Stuffed peppers:
Raw mince 500g, cup of rice, finely diced shallots, grated carrots, salt, pepper, tops of red peppers finely chopped, 20 ml warm water, mix everything with your hands, making sure it's well combined.
Wash peppers remove stalk, cut open tops and use them in you stuffing mix
Fill the peppers, don't pack them too tight, rice will swell, sit stuffed peppers in buttered ovenproof dish stuffing up, pour over tin of chopped tomatoes, salt, pepper, and little sugar to taste.
Cook in the oven 180 degree open or under the foil for 60 min, serve with mashed potatoes, and spoonful of creme fresh
Stuffing will fill 4 to 6 peppers depending on the size, will serve 4 people, my DC's will happily eat stuffing and mash, and of course sneaked peppers tops, Smile

I was going to say tacos too.

I use corn chips instead of tacos, though, as can't eat tacos without complete structural failure! but very yummy with mince bunged on, some guacamole, lettuce and cheese on top.

this is absolutely gorgeous - DH loves cooking it and he hated the idea of meatloaf at first. DD loves it too and she's only 23 months.

keema - stuffed inside wholemeal pitta bread, served with a grated carrot salad and some yoghurt. My dc have gone crazy for this just lately.
