Christmas dinner

I'm doing Christmas dinner for five. Any ideas as to a "main" I.E alternative to turkey, bearing in mind the following:

A pescatarian
A vegetarian who is also gluten free
A picky person - mushrooms are not permissible.

I'd like us all to eat the same thing if at all possible.

To add to the plot, I have only one shelf in the oven and three working hob rings.

Help!!

Hmm...stuffed mushrooms are the obvious but your picky person messes that up. How about some other kind of stuffed vegetable - halved acorn squash or bell peppers?

Here are five gluten-free stuffing recipes that all sound lovely.

Or you could just get some vegetarian sausage and saute with onions, thyme, celery, mix with quinoa and toasted pine nuts.

I'd do the halved squash actually, five of those in your oven heaped high with stuffing, and then use the top burners to make everything else.

Nigella Lawson's involtini is delicious. There are 2 versions, one with pistachios and one with pine nuts. My friend make the pine one for special occasions and it is my favourite. Bonus is that it can be made in advance. It is a fiddle to make but not difficult.

Ooh I've had those involtini before, they're delicious - the OP would have to replace the bulgur wheat with something gluten-free like quinoa or wild rice but that shouldn't be too difficult.

Oh yes I forgot about the gluten free requirement. Good to know quinoa would be an ok substitute as my MIL is a coeliac so can't eat gluten.
