Lebkuchen help please!

Hello,

I just made these lebkuchen www.bbcgoodfood.com/recipes/1941/lebkuchen
hoping to give them as additional Xmas presents, but I've just tried one and they are really dry - not at all like the lovely soft ones you buy in a bag at the supermarket. Have I done something wrong? Has anyone else got a really good lebkuchen recipe which makes nice oojy ones?

Do you have a fan assisted oven? In comments below the recipe someone suggests shortening the baking time by 3 mins.

Yes I have a fan oven but didn't use the fan bit. Perhaps shortening the cooking time would have worked but I am so over Lebkuchen now! Have made biscotti instead which came out really well.

When my mother made Lebkuchen, she always let them mature for at least a month in a closed container, which made them lovely and mellow. When they were just cooked they were dry and brittle just like yours! So you could try that... HTH

Have you tried reading a list of ingredients on the pack you got from the shop? It is a very long one. That is probably why the home made have a different texture. I am going to follow this thread as I am also interested in lebkuchens. I love the chocolate Nuernberg lebkuchen. They are my favourite.
