why aren't my scones rising?

The mixture is from a packet and its literally an add water job. Am I handling too much, rolling too thin or is it likely to just be a rubbish mixture? They are literally just the same thickness as when they went in (about1.5 cms). Any thoughts?

1.5cm is quite thin imo.

I don't bother with a rolling pin for scones, just bring the dough into a ball and press it out onto your floured surface. I probably make my scones about twice as thick as you because I don't find they rise that much really. Depends on the size of your cutter. The bigger the diameter of the scones then the thicker you should cut them.

Maybe experiment by making your own dough - it's only SR flour, butter/marge and sugar - and see if they work out any better. Packets can be a bit hit or miss.

You could experiment with the basic recipe and maybe add a bit of extra baking powder.

They need to be thicker and go into a hot oven.

I make my own mix and add a bit of baking powder and they rise beautifully - as suzikettles said don't roll just flatten to the thickness you require.

You have to use both SR flour and baking powder, and roll them out really thickly.

thanks everyone. I shall add a bit of baking powder to the mix (I have about 3/4 of the packet left!!) and make them much thicker next time. They tasted good but I had to use one for a top and one for the bottom and so ended up with half as many as had been planned!
