Courgette side dish suggestions please.

I am worn out, being in month 6 of our courgette glut. We are still getting about 12 large courgettes a week and I've had enough. However as we have nothing else to eat without a trip to sainsbos I'm hoping to serve some as a side today. Anything I can do to make them really zingy? Earlier this week I tried garlic, toms and capers but it was only ok.

I slice mine really thinly with a potato peeler and flash fry them in garlic and olive oil (3-4 mins tops). Its truley delicious, especially with fish.

I was served them once fried with a sprinkle of chili powder. It lifted them just enough to relive the boredom :)

Thanks everyone. I think I may try fried with lemon zest and chilli flakes. I used to love courgettes.....

Hi. You could cut the ends off the courgettes and slice them in half. Place them in a baking dish and drizzle olive oil all over it. Sprinkle with freshly ground black pepper, salt, freshly grated garlic and parmesan cheese. Bake for approximately 30 mins in the oven. If you want it a bit spicy sprinkle cayenne pepper on it as well.

I also like them raw. Cut in bite sized pieces drizzle with olive oil, salt, white pepper, freshly grated garlic and a small amount of jerk seasoning add other vegetables that can be eaten raw like carrots and red peppers.

I agree - I do mine grated then in bit of olive oil and butter and garlic

I've done a bake too, layer sliced courgette, thin sliced potatoes and sliced tomatoes in dish, add garlic, chili, salt, pepper as you layer then finish on top with cheese & breadcrumbs & bake for 45 minutes or so. Is lovely on own or with bread for the juices or great with roast chicken

Fry a tin of anchovies with two chopped cloves of garlic and half a teaspoon of chilli flakes in a good glug of olive oil, then add three grated courgettes and fry for a bit giving it a good mix. Lovely stirred through pasta, as a side or as a topping for bruchetta, all with plenty of Parmesan. Yummo!

Not really a side dish unless you count cake as a side to a coffee but when I have too many courgettes I make courgette loaf cake, yummy! Recipe makes 2 x 2lb loaf tins and freezes really well. I appear not to have the link for it anymore Hmm but will happily type it out for you if you are interested I honestly haven't made it so often that I know it off the top of my head

Thanks whingin but I had already made a courgette cake before I posted this. I have my priorities right. It was Nigella's courgette cake off the MN recipes and was most yummy.

Cooked slowly with white wine and thyme.
Cut into ribbons, blanched and stir fried with garlic.
Sliced and chargrilled (they freeze well like this too).
And of course, ratatouille. Lovely as a side dish or with pasta or rice. But you must let it cook slowly for ages, so all the veg melt together.
