What's your ''signature'' dish...?

...just being nosey really and also getting some ideas....

I'll start - if I am being quick and easy I do chicken parmigiana (chicken stuffed with cheese and ham and served with a light tomato base - easy peasy) veg et al

If I am trying to impress I will do a chicken or beef wellington (not really that impressive, but I feel like it is cause I make the pastry from scratch - honest gov!) :)

For pud I have mastered tiramisu, but thus far, that is all I have mastered lol

Let me in on your culinary secrets...

Otherwise, home-made bread I guess... I do an awesome Ploughmans lunch!

For everyday meals with the family lasagne/fish pie/lamb hotpot with dumplings/ chicken stew/ homemade fishcakes

For friends lamb shanks in ww sauce on pureed parsnip(google Gordon Ramsay recipe it's delish)

The easier the food to cook, the more I enjoy it.

Love most things Italian and I make my own pasta/spaghetti.

I don't have a signature dish.... I tend to rummage, collect, throw together and serve..... Thus far, I've not made a dish that hasn't worked..... Either I'm talented or lucky.... I would choose the latter....

As for desserts, I love baking but I am tantamount to useless. Can't even make a basic sponge cake.... But it's great fun dancing and singing in my shoe box kitchen with my DD and making a huge mess and getting covered in flour and stuff!

I think I make brilliant fairy cakes/butterfly cakes. I do it all by hand the old fashioned way. I also have just started to make pastry and scones again, just like my Mum taught me , again all by hand.
I don't have any signature main courses though.

I skip the salting but do press the slices, use part of a jar of passata abd sprinkle italian herbs over each tomato layer. Frying the aubergines takes forever, not sure why they think it's a 10 min recipe. Make sure they've gone translucent and are starting to brown or they wont be fully cooked (and will taste gross)

A bastardised version of Delia's Luxury Smoked fish pie (uses less smoked fish so you can eat it without having a coronary from the saltiness)

Unfortnately, is also basically her signature dish, and not sure I can compete.

I think mine is roast with homemade stuffing (especially chestnut at christmas)

and apple crumble or apple sponge (we have an apple tree in the garden so have to use em up!)

I do great risotto, favorite to impress is roasted butternut squash, roasted garlic, walnut and blue cheese risotto. Very very lush.
