Long shot - has anyone made Nigellas fruity cupcakes from the Sainsburys mag?

Can you freeze fruitcake?

Yes you can freeze fruit cake. We froze the top layer of our wedding cake (were going to save for christening but it took 7 years for baby to arrive, so we scoffed it for a wedding anniversary!)

Don't know about those cupcakes. Why don't you make a small batch and see.

You don't need to freeze fruitcake unless you plan on keeping it for donkeys years. Just wrap it up in greaseproof paper, then foil, and pop it into a tin and store somewhere cool, like a garage. We're eating a cake I made last December and very moist and delicious it is, too!

Enid that would be really beautiful a huge tower of individual cakes, how many guest have you got? I would have thought more than 50 maybe difficult to pile up? Maybe I'm talking c**p?

Is the recipe like normal fruitcake? If so and it has plenty of fruit to keep it moist then it will be fine.

Well I have decided to go for it - I am going to make a test batch this weekend and if they are nice (I am sure they will be) I am going to make a massive batch for the wedding - the caterer can hire a three-tier cake tray. I am going to use gold foil cases and (I think) ice them white with an ivory rose in the middle of each one and trail some ivy around them and down from the top.

I am going to make 48 and get two friends to make 20 each. They wont all fit on the tray but the caterers can replenish them as they disappear.

Enid, my brother had a great big heap of fairy cakes for his wedding in the summer. It looked fantastic. I think a local bakery made them in the end for £20 or so (100 guests), & my mum bought one of those tier things very cheaply from a cake decorating shop, as well as gold muffin cases to put them in. Do you want me to try & find a photo to e-mail you?

It is true that you don't need to freeze fruitcake, but if they are tiny little ones might they not dry out quicker than a big one?

I am going to freeze and defrost my 'test batch' at the weekend to check. I am worried they might dry out as they arent soaked with alcohol like a large cake. Although they do have a lovely tin of chestnut puree in to keep them moist and delicious....drools...
