Slow Cooker - curry recipe needed

My friend has lent me her slow cooker and I fancy making a curry. Does anyone have any recipes that do not involve tinned tomatoes or passata?

And any other "fabulous, it really must be tried" recipes gratefully received. This is all in the name of doing a trial run before I commit to buying my own slow cooker.....I fancy getting one, but really don't fancy death by casserole!

OK, here goes.

Chicken korma : Serves 4

Ingredients

2 onions, quartered
3 garlic cloves
4cm (1 1/2inch) fresh root ginger, peeled
1 large chilli, seeds discarded
8 boneless, skinless chicken thighs
1 tablespoon sunflower oil
25g butter
1 teaspoon cumin seeds, crushed
1 teaspoon fennel seeds, crushed
4 cardamom pods, crushed
1 teaspoon paprika
1 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
300ml (1/2 pint) chicken stock
1 tablespoon sugar
75ml double cream
2 tablespoon ground almonds or cashews
pinch salt

  1. Blend the onions, garlic, ginger and chilli in a blender
  1. Cut each thigh into 4 pieces, heat the oil in a large frying pan and add the chicken. Cook over a high heat until evenly browned. Remove from pan and place in slow cooker.
  1. Add the butter to the pan and when melted add the onion mixture. Cook over moderate heat for 3 minutes. Add all the spices and cook for a further minute.
  1. Mix in chicken stock, sugar and salt. Bring to the boil and then transfer to slow cooker pouring over chicken.
  1. Cover and cook for 5 - 7 hours on Low (or 3 hours on high).
  1. Add the cream and ground nuts.

Its even better if left until the next day.

Am loving the gammon idea. Will give that a go over the weekend.....

I really ought to return the SC to my friend and invest in one of my own. What models do you all have?

Well cat64 enjoy because it is delicious. Will report back on the success (or not!) of the gammon over the weekend.

With regards to getting a sc of my own, I was thinking of this one, simply because it can be used on the hob as well. Any thoughts?

the cheaper one is bigger and has a more powerful element. I would be really reluctant to put a ceramic pot on the hob, whatever they say, as i would be afraid it would crack.

The cheaper one doesn't have a timer, I don't know how important that is to you.

Hmmm, Cat64 yours is the other one I was looking at, but I liked the idea of being able to brown meat in the same pot. However, it doesn't have a glass lid and I know I wouldn't be able to resist peeking in. PigletJohn - no, a timer is not important at all. I think perhaps I'll get the same one as you Cat64.

I have this one. It's large but I usually batch cook at weekends and then freeze portions for reheating during week.

this is one of our favourites. Works brilliantly with pork shoulder steaks and I have adapted it slightly and put the pork on a bed of sliced onions and sometimes throw in a tsp of 5 spice
