the last Nigella cake I made came out liquid in the middle when I cooked for as long as she suggested!

robinpud · 02/01/2006 19:22

Yes I made it for Xmas eve. It was very moist- didn't look particularly wonderful but just turned the lights down!

soapbox · 02/01/2006 19:23

Is that the chocolate one or the plain one?

I've made the plain one several times and it is delicious - for a long time it was the cake I always baked when having people to stay.

It is also delicious as a desert served with caramalised clementines and creme fraiche.

Twiglett · 02/01/2006 19:24

but there's no picture in this book .. and also no flour in it so am surprised it will be a 'cake' iyswim

I've made both the plain one and the chocolate one. Didn't think much of the choc one - not chocolatey enough, prefer her store cupboard chocolate orange cake.
The plain one worked fine (but yes I think I had to cook it for longer than suggested) and is quite nice, and very easy to make (so long as you are hanging round the house for a couple of hours while the clementines cook!)

It is a cake but as robin says a very moist one. It doesn't colour up much so looks a bit pale and flacid but is definately cake and slices well

Twiglett · 02/01/2006 19:29

I don't actually own a Nigella book .. do you think I'll be exco-mumsnet-ated?

This is one recipe of hers which I've made over and over. It's so easy and very popular with my family. And it makes the kitchen smell gorgeous. Do cover with foil halfway through cooking or it will burn. Have you got the lemon version recipe? Replace 2 clementines with one lemon and increase the sugar (I think by about 50g). Then ice it with icing made up with lemon juice. Really, really yummy.
I love having an alternative to chocolate cake.

Actually I'm not a particularly domesticated goddess but my two most used cookbooks are how to eat and the aforementioned...

SueW · 02/01/2006 20:05

Twiglett, judicious use of her website should help you bluff your way through

I didn't think it was anything great. . .I prefer her orange and almond cake, which is a similar idea. I thought the clementine cake was dry & bit lacking in flavour. . .although I'd a bad oven back then.

Could also be my American sensibility, because one my English friends (a very good cook, and a foodie) seems to think highly of this cake.

Medea · 02/01/2006 20:10

ps if you own a Green & Black's cookbook you can't possibly be excommunicated.

Enid · 02/01/2006 20:19

I love it (clem cake)

Twiglett · 02/01/2006 20:58

can one make it without a food processor .. I have one of those little attachments with my braun hand-held that will let me pulp the clementines can I just mix all other ingredients together?

OP posts:
Medea · 02/01/2006 21:16

I would think you can, Twiglett. The clementines go awfully mushy at that stage. . .I mean, you could probably even mix by hand if you absolutely had to.

lucysmum · 02/01/2006 21:22

have made it a couple of times. i think you need to increase the cooking time to avoid it being wet in the middle - test with a skewer to make sure it is not too damp. lovely flavour though and good as cake or pudding.

bambi06 · 02/01/2006 21:30

i`ve made it lots of times and everyone always comments on how lovely it is and asks for the recipe but do cook it longer and put foil on the top for last 30 mins

CookieMom · 09/01/2006 16:18

You can also find lots of Nigella recipes here:

CarolinaMoon · 09/01/2006 16:22

you can pulp the clementines with a fork Twiglett, they're very mushy after all that boiling - it gives you little bits of visible peel rather than a totally smooth pulp, but I quite like it like that.

Agree with those who say cook it for longer though - even if the skewer comes out clean, it can still be very damp inside.

Twiglett · 10/01/2006 17:39

it was yum

have just made it again but added a lemon to 4 clementines ..

I didn't find it needed longer .. but I whacked my oven up to top heat then turned it down .. might be the difference?
