I had to buy some to make a Christmas cake.

WTF do I do with the rest of the tin?!

Gingerbread.

Genius! Any particular recipe, or should I just google it?

I'm just trying to find it. Will post in a bit

Do what I do, bring the same tin out every year for your one dessert spoon of treacle - it seems to keep.

www.circlecity.co.uk/kitchen/recipes/gingerbread_cake.php

This is the one I use

purplepidjin · 12/11/2011 16:52

I pondered that, alicia but a) i'm not sure I'll be repeating this experiment and b) i'd forget it was there and buy a new tin every year...

Thanks Jins Thanks

Treacle toffee.

1lb sugar (granulated is fine)
2tbsp treacle (works out about 1/2 a tin)
4oz butter/marge
1/4 pint cold water.

Stick all above ingredients in a pan and heat. Stir occasionally until the butter melts then STOP STIRRING.

Heat to between "hard crack" and "soft crack" if using a sugar thermometer, or until a dribble in a bowl of cold water is your favoured snap/chewy consistency.

Pour very carefully into a well buttered swiss roll tin

Leave to cool at least a couple of hours, pref. overnight.

Bash with a hammer or end of a rolling pin and keep in airtight tin/tupperware.

Mind your fillings ;)

Using golden syrup instead of treacle will make butter toffee, too!
