Gluten Free Brownies that taste amazing

Hi everyone, this is my first post!

I thought it was only fair that I shared something good as I have been a long time follower of the site.

Well I am gulten intolerant and I am sure many of you and your kids are. Sometimes it's hard to get a good recipe for us but I found one on the Forman and Field website.

I will save you a trip to the site and just post it here.

Ingredients:

100g Blanched & Chopped Walnuts
3 Free Range Eggs (beaten)
225g Unsalted Butter
50g Chopped Dark Chocolate
225g Dark Chocolate
200g Castor Sugar
1 Pod Bourbon Vanilla
150g Ground Almonds

Preparation:

Preheat oven to 140 C / 275 F / gas mark 1.
In a bowl over simmering water melt the sugar, butter and 225g chocolate, stirring until mixed and melted, but taking care not to heat too much.
Take off the heat, allow to cool slightly, and add the seeds from the vanilla pod, walnuts, ground almonds, eggs and chopped chocolate.li>
Line a buttered, shallow 20cm square baking tin with baking parchment to cover the base and pour in the mixture.
Bake for 35 minutes then give the tray a gentle shake: the brownie should wobble very slightly in the middle. If it still appears liquid, give it another 5 minutes.
Take out and allow to cool completely in the tin. The texture should be rich, fudgy and slightly moist.
Leaving it in the tin, slice into squares of your preferred size and use a thin fish slice to ease them out one at a time.

Once you smell them you wont want to share!

It looks yum!
My friend has coeliac's and was diagnosed a few months ago and is still getting used to what she can and can't eat. However at her last appt they have advised she also avoids all dairy for three months!
Do you know any gluten and dairy free recipes?

Michael, you can substitute Pure spread for butter in most recipes.

it cooks well, and I haven't had many problems using it.

milk/cream substitutes are harder, but there are possibilities (usually soya based)

Thanks Frankie for the recipe - they look good, and will give them a go with the dds.

For anyone wanting to cheat - the Hale and Hearty chocolate cake packet mix is really good, and turns out a great cake (had to do an emergency birthday cake last week, and it turned out really well)
