Vegan, no potato, pasta or rice. Recipe ideas?

I have a clients wife coming to supper who is vegan and doesn't eat potatoes, pasta or rice. So do any of you have any ideas?! I'm thinking chickpea tagine and couscous, but I was wondering if you could think of anything else?

This is lovely - butternut squash salad with puy lentils and a soy/balsamic dressing. It's one of our favourite meals in our house.

Is polenta ok? Grilled polenta with roast veg is lovely too.

I have recipes for vegan chocolate cakes and a saucy chocolate pudding if you need (all full of flour though).

Aubergine and tomato casserole is my vegan stand by.

One or two aubergines, sliced and fried (you can do them in the over to be more healthy)

tin or two chopped tomatoes

herbs and salt, pepper, you can add a bit of chili or ginger. Onion and garlic are optional, but you do need to fry them before adding tot he tomatoes.

layer the aubergines and tomatoes

now the topping should be yoghurt with breadcrumbs but I've found yofu works, anlthough it slightly solidifies.

Ideally it needs something crispy like breadcrumbs so not sure maybe grated carrot would crisp up.

serve with salad and some form or carb, she doesn't need to eat it.

To be honest if she is a vegan that is tricky enough for people to work around - I think she has a bloody cheek expecting you to work to a low carb menu as well! I could not expect other people to be so inconvenienced by me with a clear conscience!

(I often prefer to eat low-carb but if I think it's going to cause other people problems I just eat something before I go so I don't starve, and then politely push the carbs around the plate and take little nibbles to look willing.)
