hello. We eat loads of mince and I'm thinking about substituting the mince for quornq mince.
I have never bought it before so any advice most welcome.

Do I buy fresh or frozen?
Do I use it in recipes in the same way as beef mince, cooking times etc?

We eat lots of bolognaise/chilli/mince and potatoes.
Thanks.

Fresh/frozen - makes no difference, I usually buy it frozen when it's on offer
Cook in much the same way, although I find I use a lot more oil than meat equivalent as it's thirsty.

DH prefers the asda version as he says it's more 'meatier' in texture.

sillymillyb · 06/11/2011 14:39

Yup, what redblanket said! I buy frozen and use in exactly same why I would normal mince - but agree that it needs more liquid than the meat version.

I prefer quorn to normal mince now :)

I also use Quorn occasionally, but I prefer the Linda McCartney frozen mince. You need to add some oil if you want to fry it because it doesn't have any fat content of its own. But overall your meal will end with less fat than real minced meat would. The Linda McCartney one goes further because you add the quantity of liquid to rehydrate it. I haven't tried the Asda one.

I use fresh or frozen, and add it to the pan after the veg and just before adding the liquid. I don't use much oil.

I've just started using the Tesco own chilled quorn mince. Nobody noticed the difference when i added it to my bolognese sauce and served it with spaghetti so I'll be using it all the time now. And I'm going to make chilli with it this week too. Will it work okay in the slow cooker do you know?

MrsHoolie · 08/11/2011 00:11

Thanks all.
I will buy some tomorrow.
No idea about the slow cooker...my hunch is that it won't work but someone on here must know!

It will work fine in a slow cooker. :)

Katiebeau · 08/11/2011 12:20

Just add more flavour! You miss the meat juices flavouring. Slow cooker on low with plenty of gravy works too.

snice · 08/11/2011 12:26

ny advice would be to stir in a scant teaspoon of marmite to any quorn mince recipe-otherwise its too bland. In fact its much better for strongly flavoured things like chilli or curry or bolognaise and a bit crap for something like a shepherds pie.

Katiebeau · 08/11/2011 12:54

I add a bay leaf or 3 if slow cooking and a teabag of herbs. Marmite excellent flavouring as suggested. For shepherds pie I also add Worchester sauce (tbsp) and mustard!

DP and I can't actually tell the difference between the expensive ready made soya minces and the 90p per tonne dried stuff. Apart from the soak for 20 minutes soaking time before you use it!

We had the Roast Chicken Style nut roast thing when the IL's came round the other day (veggie) and it was luvverly Grin

I would suggest not buying Quorn mince and buying Tesco frozen soya mince instead. Much nicer. Also, add a bit of soy sauce when cooking. Sounds odd, I know, but gives it a depth of flavour that's really nice.

Mabelface · 08/11/2011 13:09

If you're veggie, ensure that your Worcester sauce doesn't contain anchovies.

GuidoFawkestooearlymustdache · 08/11/2011 13:15

i add mushroom ketchup to quorn mince - i haven't ever seen an own brand soya mince (but really don't like asda own brand meat free sausages so haven't looked for it)

crikeybadger · 08/11/2011 13:20

Oooh, good to hear that the other substitutes are as good, if not better than Quorn. I buy Quorn although it is pricy so I'll give the others a try.

I made Keema with peas the other night and it was delicious. Ate it when we came back from watching fireworks and it was really warming.
