Veggie Christmas main course

Has anyone got any ideas for a veggie Xmas main course for an 83 year old. I've got 13 for Xmas lunch and my FIL is a vegetarian. It's got to be something that goes with roast dinner trimmings and preferably something that can be made in advance and heated in the microwave as we only have a single oven.

We're veggies and for the last 12+ years its been delia smith's parsnip roulade - its yum and we have it with all the normal trimmings. We normally make it the day before. Its also nice cold with salad etc the next day. FIL once asked us why didn't we have something different - we did have to point out that they have turkey each year so we'd stick to the parsnip roulade thanks!!!!!!

Hugh Fairley whatsit did some lovely looking main course on his programme the other night - mushrooms in a sort of gravy thing with mash. He did it for a wedding reception and apparently it went down brilliantly - don't have a link but might be worth googling (though I suspect the recipe will be in his book out for Christmas).

Last year I found a yummy recipe on the internet which was a basically a chestnut wellington - it was pastry criss crossed over a layer of caramelised onion, a layer of stewed cranberry and then the chestnut filling (made a bit like chestnut stuffing). It was delish and went a treat with all the trimmings. I made two and put one in the freezer and it defrosted and cooked a treat too.

They all sound lovely. If I do parsnip roulade I might be able to snaffle some of FIL's home-grown parsnips, 83 and still grows all his own veg, puts us to shame.

Was going to post Delia's parsnip roulade too- it's delicious.

Otherwise, a nut roast works really well.

Yes, the good old Cranks nut roast is the one I do every year. It's very easy to make and delicious. I usually make it the day before, then reheat it on Xmas Day.
As suggested above, Xmas the recipe up by using chestnuts, doing a layer of cranberries, adding a drop of port to the mix - or any other way that appeals! As long as the gravy is vegetarian, there's not reason why that shouldn't slot into a traditional roast turkey/duck/pheasant/goose/whatever Xmas dinner.

We always Rose Elliot's Chestnut and Mushroom En Croute, it's so tasty and festive.
I can't wait for the Christmas Eve ritual, with Sherry and Carols from Kings on the radio.

I'm the only vegetarian in my house, I will be making myself a mini nut roast for Christmas dinner. I may make a cauliflower cheese [for everyone who wants it] as well, which will make it more filling as well.
Nut roast, or nut wellington goes very well with a roast dinner. You can also make it in advance and keep it in the fridge. Another alternative would be some sort of lentil loaf.

I am planning to do parsnip, cranberry and chestnut loaf this year for my MIL - I shall be doing a testrun soon just to be sure it will be 'special' enough for Christmas dinner.

I have seen a Chestnut Bourgignon Pie in Vegetarian Living. We have several Xmas dinners in order to have lovely food as already mentioned up thread.
We have a very traditional meal on Xmas Day but will be more adventurous on Yule which is the main celebration for DP and I.
We are so lucky not to just be expected to just have the vegetables, an option I was given at one restaurant at Xmas time Grin
