Will this work - toffee cupcakes with runny centre.

I have a need to eat toffee cupcakes with runny toffee centres. I've got a can of condensed milk on to boil and am planning on doing a normal toffee cake mix and putting a spoonful of cake mix, then a spoonful of toffe, top with a spoonful of cake mix, bake as normal. Does this sound like it would work?

Not sure on what icing would be best. Hmm . . . maybe just more toffee?? Grin
Any suggestions?

the best thing to do would be to cook regular cupcakes, then cut a cone out of them when they are cooked, snip top of cone off, put toffee in the hole, then pop the 'lid' back on - does that make sense?

I've made millionaires shortbread cupcakes where once the chocolate cupcakes are cool I scoop out the centre with an apple corer (saving the piece of cake you pull out) then fill with caramel, push the piece of cake back in, swirl on milk chocolate icing and stick a piece of shortbread on top.

Absolutely delicious!!!

Going to try baking it in first, and if that doesn't work I'll do it Tilly's way. Shineshine, your idea is inspired, might just nick it and pass it off as my own Grin

I do my cupcakes like that. Cook as noral then remove a chunk from the middle, fill with caramel, replace lid and ice. Works fine.

You could try buying some soft toffees and cutting them into small pieces and putting them in the uncooked cupcake mix. Or, like me, stuff the whole thing into the middle of the cake! They should soften and melt during cooking.

To clarify - I've made them they way you suggested, with cake mix/caramel/cake mix then baked.

If you want it to be very oozy then put it in after, otherwise the heat of the oven will firm it up, but it might still be soft if you bake it.

I do this with lemon curd...YUM! Put half the muffin mix into the papers, add a dod of lemon curd and then the rest of the mix.

AND you could use the left over condensed milk with some melted chocolate and maybe double cream to make a ganache to swirl over the top. :D

Update: It didn't work! The resulting cakes were delicious but looked hideous as the toffee all bubbled up over the top. The cake was all squishy and pudding-y but definitely not pretty. Have a batch cooling with no toffee in them so will try the way Kveta and Sunshine suggested.
