Thinking about cooking game on New Years Eve .......any advice for a novice????

Our local butcher is a "game" specialist. He also has venison too.

Dh likes all this stuff so was going to cook a treat for him.

Now what should I buy that's not too difficult to do something delicious with?

don't do it, it is all pretty disappointing.
or if you INSIST then go for pheasant or rabbit and do a very rich casserole which is VERY well cooked and melty. and serve it with dauphinoise potatoes. The potatoes will be delicious even if you are thinking "hmmm, what is all the fuss about game?"

actually pheasant casseroled for ages in appley stuff (calvados or with apples or something)with raisins etc in it can be OK. but DON'T roast game, it is a waste of time. IMO (plenty of people will disagree I know)

Pheasant and venison are DELICIOUS (used to work on a farm in SOmerset providing nursing care, employer was a very talented cook who provided me with meals on site... usually game at weekends). Pigeon is gross though, and I don't like rabbit either. Venison stew, a good rich one with redcurrants in would be fantastic, or a pheasant pie (puff pastry).

venison is FABULOUS

buy a joint, cover it in a bottle of cheap red wine and leave it for up to 24 hours

cook for less than you'd cook beef

easy peasy

I think I'll go for venison because I can just chuck it in a pot and leave it for ages.

Although if I don't feel better soon following my trip to the dentist I may abandon the idea and send dh out for a takeaway

Not too much wine though - Hugh Fearnely Whippingstick reckons it dries venison out! We just had the most amazing game casserole made with diced game from Asda (extra special range)
It had venison, pigeon, rabbit, hare, pheasant in it. I marinated it for a couple of hours in red wine, olive oil, thyme, then browned it, added carrots, celery, bay, stock, redcurrant jelly and slow cooked for 3 hours - just fabuolous!
