so any ideas how long it will last before it needs to be cooked?

Was thinking of making a curried pumpkin soup but not sure i'll have time on Mon so perhaps Tuesday. If its kept in the fridge will it last?

Also, whats the best way to cook the pumpkin seeds (i hear they make a good snack). I was thinking of a quick wash, dry, then roast in a hot oven and keep an eye on them?

Any ideas/tips gratefully received.
TIA

If I were you I would compost the carving pumpkin flesh, leave the pumpkin seeds out for the birds, and buy a butternut squash to eat Grin
Carving pumpkin flesh ime is tasteless.

Unless you have carved an eating pumpkin, in which case, yeah I reckon it should last until tues.
no idea what to do with the seeds sorry.

I usually bung the flesh straight in the freezer in a bag, then make curried pumpkin soup with it the next week. Enough spices and you cant taste the pumpkin anyway!

The kids like planting the seeds in the hope of a pumpkin tree next October [hgrin]

I'm ashamed to say that I carved my first pumpkin this year - quite enjoyed it too - but despite my good intentions I discarded the flesh as it smelled so unappetising. I'm intrigued though, are you saying that the pumpkins on sale eg in Tesco are not intended for eating? Is that just a quality thing presumably?
