Milk free rice pudding disaster. Any vegans around?

I'm allergic to cosmilk so I used soya milk for a rice pudding. It didnt go well and it tasted too carbohydrate heavy.

What do vegans find works? I really like rice pudding.

Try this. although I'm intrigued to know how rice pudding isn't carb heavy - that's the whole point of it, a lovely whack of carbitude. Carbs are much maligned, dammit. Trust me. I'm a health journalist.

Thank you MI, maybe I meant too starchy, it just didn't taste right you notice how acidic milk, yoghurt and cheese are when you don't have them for ages.

I want a nice comforting pud for these dark nights.

Try coconut milk? You can buy kara coconut milk usually where soya is. Or use proper coconut milk you'd use in a curry - have done this with normal rice. Yum!

Have you tried oat milk? Looks bit disgusting when you first pour it out but if you give it a good shake it's ok. Meant to be v healthy for lowering cholesterol too.

Almond milk makes a very good rice pud too - you really need to make your own as the bought stuff is very sweet IME. There's a recipe here though you get better milk if you soak the almonds in the water for an hour or so after blanching/removing the skins and before blending. (You also need to run the blender for really quite a long time - something like 2 minutes by the clock.)
