Bread Maker advice please

My son bought me a bread maker for Christmas, I have tried to make two loaves from the bread mixes that he gave with it (one white and one wholemeal) both came out a bit doughy. What am I doing wrong?

Also any tips on how to get the perfect loaf (or the best bread mixes ect) would be gratefully received.

Are you making sure you aren't putting in too much water?

did the bread mixer come with a recipie book? i use the recip[ies provided with mine. i always use superstrong flour, and dont have a problem.

My father has a bread mixer and he said its just trial and error until you find the right amount

Sorry for disappearing, the kids woke up and it?s been 'mayhem' ever since.

Hulababy, I did measure out the correct amount of water (I think) but it has been rather hectic here, I probably didn't do it properly.

FairyTaleinNewYork it did come with a recipe book, I'll keep on trying out different things, thanks for the tip about the superstrong flour.

Niccick I think you maybe right, trial and error until I get it right.

Use bread mix! I had the same problem and my mum suggested using bread mix. It sounds like a cheat but it does work.

Yes, bread mix is great! Especially at first. Also, even with some mixes I have found to use just slightly less water than recommended. This is usually the case with white or sweet breads and not so much with whole wheat types. Also, the water typically needs to be room temperature, or with some mixes a little warm.

Keep trying. We love our bread machine and use it every week.

I've had this problem when I used cold water, when the weather was very cold and when I used the wrong programme by mistake. My bread machine cook book also suggests that if you leave the loaf in the machine for too long before taking it out of the tin then the loaf will go soggy.

Which mix are you using? some just work better than others IME. The sunflower bread one they do in Asda- that works a treat in my machine but not in my Mum's, they are all so different.

What Mother does (she never buys bread and has a healthy seed thing going on ), is to make the one in the recipe book and then buy big bags of seeds- pumpkin, sumflower, linseed, poppy- that she can throw in at the appropriate moment, says it works better in her machine and her bread certainly is yummy (and think of all the Omega's for the little darlings...)

Thank you so much for your replies and suggestions, I'll keep on trying.

The tomato bread sounds lovely, (as does adding poppy seeds etc), definately going to keep trying!

Think a trip to ASDA is required and I'll have to try out all of the different kinds. The bread mixes that DS gave with it were Gary Rhodes mixes BTW.

I'll try less (but room temperature) water next time too.

If you're making wholemeal use about a third strong white flour.

Also you have to take te loaf out within 30mins of it finishing or it goes soggy

I made Parmesan and sun dried tomato bread yesterday evening and it was yummmmy!

Using a bit les water than recommended did the trick.

Can anyone direct me to a good online breadmaker recipe site? Or does anyone have a recipe list?
We have a new bread maker and fancied having a look at other recipes, I am particularly interested in ginger bread and malt loaf, both are not listed in the recipe book that came with the machine. Many thanks in advance.

Was considering buying anoter but get put off at the stupid amount of bread I will eat bake a loaf eat 2 LOL

i know. i am going to get so fat. up to now one loaf is not even lasting a day. have made normal bread and cheese and onion so far but looking for further ideas. anyone.
