Fishcakes! Advice please...

I have only just started cooking and just made fishcakes for the first time.

I haven't cooked them yet and was wondering if they would be ok to freeze?

If so, would it be better to freeze cooked or uncooked?

I always end up making more than I need so any stick the uncooked extras on a tray and freeze, then once they are frozen put them into freezer bags.

I find they freeze really well,

I thought they would probably be better frozen uncooked.

Again a stupid question but how would you then defrost? In the fridge overnight and then cook as normal?

Told you I'm clueless...

I usually get them out of the freezer on a morning and leave on the side to defrost, I know I should put them in the fridge over night but I'm never that organised!

Really easy actually (would have to be for me!).

It's basically mashed potatoe (with seasoning/herbs), fish (white fish/salmon etc) and breadcrumbs. Just need an egg to bind it together.

Sometimes I mix a tin of salmon into some left over boiled potatoes, squeeze of tomato puree, pepper, roll into balls and flatten, coat in egg and breadcrumbs (or buy a packet of matzo meal - which are ready made breadcrumbs really) and shallow fry. Really doesn't take long and the DCs love them. Can poach fish and boil potatoes from scratch too!

I poached the fish in milk first then flaked and mixed with mash.

I fried mine but guess you could oven bake too?

I put a bit of the egg in the mash and fish mixture before coating as well.

They're really nice with Panko (Japanese breadcrumbs) as a coating (dip in beaten egg first).

Fish cakes are excellent when frozen. Just de-frost and then shallow fry gently in a little oil as normal.

Best is to make the fishcakes (mashed potato mixed with either tinned salmon or poached, flaked fresh fish), coat in egg, then breadcrumb, then open freeze. I have used smoked haddock, white fish and salmon and all work really well.

They are very nice with chopped fresh parsley included in the fish and potato mixture.

Bearcrumble - I have been trying to find Panko with no success (live in the sticks near Bristol?Bath). Any ideas where I can find it? Apparently it is just the thing for making home-made chicken nuggets for DGSs.

I do mine as desribed above, rolled in flour, egg and breadcrumbs (or matzo - yummy!) then fry them til golden. I freeze them cooked, them put straight into oven from frozen to heat them up when needed. They take about 25 mins (the same as oven chips, conveniently!!)

I got DH to get me panko in Tokyo when there on business...3 days later I saw it for sale in Tesco in the 'world foods' section. And I am in the sticks in Hertsfordshire, so not exactly cosmopolitan!
