Vegetarian curry feast help please

Have friends coming at the weekend and have promised them a huge curry banquet.

So far I'm planning on making -

chickpea chaat
mattar paneer
spiced rice and plain rice
naans and chapatis (bought)
samosas and bhajis (bought)
coconut chutney
fresh mango chutney
minty yoghurty dip
onion, cucumber and tomato salad
spiced green beans and/or spiced mushrooms

I could do with another veggie curry but my usual one involves chickpeas and I've got those in the chaat. Any ideas please?

Also - what for pud? And what to drink?

I always like cauliflower curry, I haven't got a recipe to hand but there is a good one in Madhur Jaffrey.

I love cauliflower curry but unfortunately dd2 won't eat cauliflower. I suppose I could make alloo gobhi anyway, as there will be plenty of other stuff for her to eat. A big mixed vege one would be good but I haven't yet found an excellent recipe.

I agree with GetOrf, there is a fab cauli curry with onions and tomatoes in an old Madhur book. Mmmmm.

i think you need another curry aswell, as most of this is snack/ side dishes,

I was going to suggest my boring old gujirat potato curry but it is pedestrian alongside that lot.

Here it is anyway

Couple of lbs of spuds (waxy ones)
Turmeric
Mustard seeds, about desertspoon
Urad dal, about teaspoon
2 teaspoon chilli powder plus couple green chillis stabbed with a knife.
20 or so curry leaves
Sprinkle sugar

Chop the potatoes in chunks, boil in salty water until nearly done

Heat oil in wok and get v hot, then throw in mustard seeds and urad dal until they pop. Then add the curry leaves, turnermic, chilli powder and chillis, some sugar and salt and about a teacup of water and boil for about 5 mins. Then throw potatoes in and stir about, then put lid on and steam until they are done.

You can also add some cabbage/spinach to this - add it with the potatoes and steam for a bit longer.

That potato curry sounds good.

I do like dahl but am yet to find a recipe that I really love.

Fruit salad and icecream could work as pud but any other suggestions welcome!

Lager is a given but quite fancy making a jug or two of something too.

I never really bother with pudding tbh after a curry. Just drink more beer, that'll fill you up Grin

However if you want to do one I wouldn't bother with kulfi (yuk) but do something very sharp and fruity, say a lemon curd ice cream or something.

Lemon curd icecream - yum! You have also just reminded me of one of my v favourite v easy puds - mix posh lemon curd with creme fraiche or double cream plus a squirt of lemon juice and serve in tiny glasses with posh biscuits. Gorgeous.

Good old Nigella is good for some drinks recipes.

I made a black velvet - equal parts of guiness and asti spumante. That was lovely.

Or Petunia - bottle of prosecco, 125ml cointreau and 500 ml pink grapefruit juice (just looked it up).

That sounds perfect remus - I made a Nigella recipe once, think was called lemon cream, and served it with shortbread biscuits in teacups. You want something easy, after making all those dishes you don't want to ponce about making a complex pudding.

Be careful, it tastes like pop but is quite potent. A couple of glasses of that will get you tipsy!

if you go to the asian shops they have packet mixes for rasmali. kulfi, falooda, kheer, gulabjaman, so you could make that,

or fruit chaat using chaat masala,

are you gonna be on come dine with me?

baby aubergine and potato is nice, or bhindi?

I think Tesco might do it around here too - I will have a look in town tomorrow. Think I'll do the lemon creams this weekend but it would be good to see what's available anyway. Thanks again.

My Indian friend gave me her Dhal recipe. I've made it loads, its gorgeous. DH is a real curry snob and highly rates it too.

Dhal

2 large onions, finely chopped
2-3 cloves garlic, finely chopped
1 tspn turmeric
1 inch chopped ginger
1 chopped green or red chilli
1/4 pack butter, splash of olive oil
1 mug washed red lentils
salt to taste
1/2 mug soasked basmati rice
2 tbspn split peas
1 tin chopped tomatoes
1 heped tspn masala
big bunch fresh coriander
greek yoghurt to serve

Start by soaking lentils, split peas and rice (separately). 10 mins soaking will do, although the longer the soak the less they need cooking.
In a large saucepan, place half the butter and the oil. Add garlic and ginger and gently fry then add oniions, cook until soft. Add chiili cook 1 minute gently. Add turmeric cook 1 minute. Add salt and drained lentils and peas 1minute, keep stirring. Add hot water, enough to cover pulses by 2/3rds. Bring to boil then simmer, cover and cook for 20 mins. Check liquid during this time. Add water as necessary.

Add drained rice, cook 10 more minutes. Check liquid during this time, needs to be thick soup consistency, add liquid as necessary. Stir.

Add tomatoes.

Add rest of butter, cook further 10 minutes then add masala. Check liquid during this time, stir.

Add chopped coriander at end and swirl in a dollop of yoghurt to serve.

If reheating add more water, at least a cup.

Thinly sliced pineapple soaked in a little orange juice and passionfruit pulp and seeds, then refrigerated, is lovely for pudding.

Thank you. That sounds good apart from the tinned tomatoes, which are the food of Satan. Never seen rice in a dhal recipe before.
