Because I am so bored with food!! I am bad at eating my 5 a day and determined to start doing it as I keep getting endless colds
I can cook but I struggle with ideas. For instance I love cous cous but what do you put with it?
I am low carb too but will eat anything except offal! I've looked at recipes but get put off by ingredients you only use once. Oh cooking just for me too :-)

Here is an amazing cous cous recipe. Has totally converted me. Think it is a derivation of a nigella recipe.

Grate fresh ginger and lemon zest. Add to dried cous cous with paprika. Pour over stock and leave to do its stuff. Meanwhile, finely chop a red onion and squeeze lemon juice over it in a bowl to take bitterness out. Halve some cherry tomatoes and finely chop some coriander. Cous cous should be ready by now. Mix everything together with the cous cous and add a couple of lugs of olive oil.

I usually have this with salmon fillets about three times a week.

5-a-day is easy with thick veg soup! Thicken with lentils/soup mix/chickpeas etc instead of potato for a low-carb option.

I'm obsessed with soup Blush pea and ham or cauli cheese is my fave 2 that I make
I've just got a bit lazy with cooking

I made it, chucked in some spring onions and cucumber and had it with grilled goats cheese - was yum

A little tip for making cous cous. Put the required ammount of cous cous in a container with lid. Add a few safron strands, herbs, salt and a knob of butter. Top it with boiling water and put the lid on tightly. Fluff it up with a fork. The butter makes it really nice and moist.
