Meatball recipe please?

Can anyone help? I appear to have put them in the meal planner but have no clue how to make them!

I chop and fry an onion and garlic and leave to cool.

then mix with mince, about a cup of breadcrumbs, an egg then salt, pepper and any spices herbs you want. I often add pinch of chili, and maybe some italian herbs if you are having with pasta. I've also added paprika, or thyme is nice in pork meatballs, or grated apple. If beef a spoon of horseradish or grainy mustard is nice. Don't be stingy with any seasonings or herbs as they can be bland if you are not careful.

I use half beef mince and half pork mince as it seems to make a lighter meat ball. I tend not to use onion or garlic in the meatballs themselves - I blitz the onion and garlic in a food processor or mini chopper and fry in olive oil before I add passata to make the sauce then drop in the meatballs one by one into this while its simmering.

As for the meatballs themselves - the egg is compulsory but after that and the various seasonings you can add - i think its up to you - just make sure you mix well (I use hands and squeeze loads so its a real mush - not just mince mixed with egg!).

I put mine on a non stick tray and brown in the oven as I find frying them they can break up. Then add them to sauce.

I make mine with pork mince, chopped up olives & fresh thyme or sage. I don't bother with breadcrumbs, just an egg. And I like to stuff a little lump of feta in the middle - is heavenly! I'll brown them in a splash of olive oil then roast on a low heat in a bath of tomato & red wine.

Don't put breadcrumbs or egg in your meatballs. Use milk-soaked bread instead. Tear up some bread and soak it in milk for a few minutes then mix it into your meatball mix. The bread will break up as you mix it amd become amalgamated into the mixture. You won't need any egg to bind it either. The milk-soaked bread makes the meatballs really nice and soft.

For mixture, I use beef mince (or beef and pork mince), some finely chopped onion, garlic, herbs (depending on what I've got; often thyme as there's loads of it in our garden), salt and pepper. Chuck in the milk soaked bread and you're good to go. You could use any kind of mince you like and it'd still turn out fine.
