Nigella's Sweetcorn Pudding type thing that she does with Ham in Coke, CREAMED SWEETCORN??? Eh?

All round the supermarket this morning looking for Creamed Sweetcorn for this recipe (from Nigella Bites). Ended up buying loads of ordinary sweetcorn in the hope that I could make "Creamed Sweetcorn", anyone got any idea how I would go about this?

Creamed sweetcorn is something you buy in tins in Canada and the US. It is very tasty, but probably not if you're not used to it. (It's called "creamed corn" back home. We don't say "sweetcorn".)

I don't think there's any cream in it.

And processing them won't fix it.

I'll find a recipe ...

Ok this one isn't well-written, I don't think I understand what it says.

This recipe looks better. It calls for frozen corn, though.

Thanks NQC, I'll give one of those a go. Not got any frozen sweetcorn, only tinned, wonder if it matters as both recipes talk about defrosting the sweetcorn first.

Is frozen sweetcorn cooked or raw? That might make the difference.

if you're going back to the shops you could consider red cabbage which is FANTASTIC with ham in coke...

(that's what we're having tomorrow evening, with the creamy potoato gratin)

Just back, been to three supermarkets, no red cabbage in any of them. Got the frozen sweetcorn so it's the sweetcorn pudding and now potato gratin.

MrsSpoon - may I suggest you have an alternative to the sweetcorn puddingy thing? The gammon in cola is gorgeous but we all hated the sweetcorn pudding (and it took hours to cook, much, much longer than Nigella says). Sorry if that's not what you wanted to hear...

Arrrgh, had the ham in coke before and love it. I don't know what to do now!!! Don't know if I can face the shops again (been to the supermarket 5 times today ). I've got carrots, could perhaps do some roasted carrots with honey or maple syrup??? and cook up some of the sweetcorn on it's own? Along with the potato gratin?

I'd do that. I mean, you might like it - but we thought it was yuck. It's like egg custard with sweetcorn in it. The gammon is very rich (and yummy) so probably just some sweetcorn on its own, and your potato gratin would be enough.

Thanks Moo, I think I latched onto it because she said that children love it, there will be four children tomorrow night and also DS2 (who eats very few veggies) likes sweetcorn.

I think I will avoid it, my friend who is coming is a fantastic cook and I wouldn't want to give her anything rank.

The kids will love the gammon though, won't they? It's sweet and barbecuey (I want it now...and I am so not going to the shops again). Good luck with the meal - enjoy yourselves!

You can buy creamed sweetcorn in tescos.
The Nigella recipe sounds yummy. Can someone post the recipe.

Dh is a chef he says to 'boil small amount of water add sweet corn, seasonings, onion flakes herbs, chili vinegar, anything really, in a small bowl small amount of cornflour and water mixed together, slowly add to corn mix ,( important no lumps) simmmer gently for ten minutes, until flour taste has gone ,
Pulse blend in small amounts ( if you have a blender, otherwise potato masher can help break it down, check for seasonig.' Hoope this works

Coribells, unsure which recipe you were after but they are both here . I did notice on one of my trips to Tesco today that they had creamed sweetcorn but the shelf was empty, perhaps everyone in my area is giving this recipe a go.

Depending on how time goes tomorrow I might try the sweetcorn thing just to see what it's like. Although being my usual indecicive self I am making to main courses and two sweets, also have plans of making some dinner rolls (in fact this morning had a dream that I had made them and they were lush, I was a bit disappointed to find out that I was still in my bed and it hadn't actually happened ).

I didn't make the sweetcorn pudding BTW, completely ran out of time but the plain boiled sweetcorn seemed to go down well enough. Will definately try the red cabbage next time.
