now ive poured the mixture into the bowl... i dont want to cook it till xmas day morning (so the flavour can soak up good... do i cover it and put it in the cool dark cupboard?

Does it have any ingredients that usually need refridgerating? If so, I'd stick it in the fridge.

you need to steam it now and then reheat it when you want to eat it.

Tbh it is better left for a few months (even a year) to let the flavour develop.

actually, it is ok after a year, but not as good as if it's made in October or November to eat at xmas.

definitely steam it now. The infusion of flavours happens after you steam it, not before.

you just reheat it when you want to eat it.
