... what would be your dream main meal? Having lovely friends over and really want to feed them well. Thinking just good smoked salmon on brown bread for a starter and I can make a pudding the day before, so am ready to put energies into a hearty main course. Thinking along fairly traditional lines, but I am veggie myself so have limited experience with roasts and suchlike. Any ideas? Hub is happy to do the meat part of any recipes so anything's a go-er. Thanks folks, in advance.

Pork is always good but considering the season how about some vension?
A bit dear [hgrin] sorry, but a little goes a long way it's a bit different.

If you do go with the pork make sure and get the skin really dry and then score it and rub in some oil and rock salt to get really crunchy crackling

Roast lamb, mint sauce, tons of roast potatoes, fantastic gravy. Crisp veggies. And yorkshire puddings. Yes, even with lamb!

Pork shoulder braised overnight in cider, then blasted in the top of a very hot oven to crisp skin, with roasted spuds, sprouts, and the juice reduced to gluey consistency. An proper apple sauce without sugar Yum!

I'm doing 24 hour slow roast pork with mash or baps and apple sauce, veg on side
And Bramley Apple cheesecake for pud
