Yes there's a difference.
Evaporated milk is vile.
Condensed milk is completely disgusting.

I was wondering that, and went by the recipe someone gave me on here for peppermint creams which states condensed..... not made them yet, so can't comment any more

Sorry, its just that my granny used to make a foul dessert called snow, it was evaporated milk and egg white whisked up, with pink food colouring swirled in, and it used to make me throw up.

One of them (condensed?) has sugar added I think (very thick and sticky)

Condensed milk
This is a sweetened, concentrated type of milk which can be produced from whole, semi skimmed or skimmed milk. The milk is subjected to heat treatment, then it is homogenised and sugar is added. The sweetened milk is evaporated to a concentration three times that of the original milk.
Uses: In puddings, cakes, ice creams and sweet sauces.
To store: Condensed milk is only available in cans, once opened remove from the can, cover and store in the fridge, use within 3 days.

Evaporated milk
A concentrated, sterilised form of milk which has a final concentration twice that of the original milk. The milk is evaporated under pressure and homogenised. The milk is then poured into cans, which are sterilised at high temperatures.
Uses: It can be used as a pouring cream and served with puddings or fruit. It is also used to make ice creams, mousses and milk puddings.
To store: Evaporated milk is available in cans, once opened remove from the can, cover and store in the fridge, use within 3 days.

Condensed is for sweet making.

Evaporated is yucky

santaslittleunicorn · 19/12/2005 13:52

aha that must be why my pep creams have taken about 10 packets of icing sugar to thicken... I used evaporated milk ...duh !

Evaporated diluted back to original level tastes the same as UHT (same process really) - when I was little my mum used to get a pint from the milkman every Saturday and make rice pudding with it. God knows why!

santaslittleunicorn · 19/12/2005 13:56

isn't there something nice you can use evaporated milk for though?

(I have vague recollections)

evaporated milk is to go on tinned peaches
condensed is thick and can go on sandwiches or eaten with a spoon
