Should I use funny sugar (preserving / granulated) or just caster?

I've made some with caster but I didn't know if it'd turn out better with another sort. I'm making Christmas presents! :)

Caster sugar is fine as apples are high in pectin. Please put me on your list for a jar Grin

I have just looked in my River Cottage Preserves book, and as apples are high in pectin you don't need preserving sugar - granulated will do the job fine.

Perhaps I should make some too so that my name actually makes sense Smile

Agree no need for preserving sugar. Apple and chilli jelly is good too- just add finely chopped red chillies

Okay, I need some more help now. My next lot of jelly hasn't really set. What can I do about it?

I'm all Confused as I did the same things as the first batch, except for using different apples (I think) and adding some lemon juice.

Re-heat and try letting it boil for a little longer. If it still seems watery, add some pectin (sugar or liquid). Make sure you don't add too much or it could go the other way. Sterilise the jars and re-pot as before,

Where can I get pectin from? I had a look in Sainsbury's today in both the jam & home baking sections but I couldn't see any.

Silver Spoon's website say they stock it at Asda, Morrisons and Co-Op - this is the powder one.

Or you can get Certo which is a liquid pectin at Sainsbury's.

How do you use apple jelly? I'm nit sure I've ever tasted it.

It's quite sweet, although a bit of lemon juice helps that.

I think you can use it like jam, or with cold meats or cheese. Someone suggested adding finely chopped red chillies for apple & chilli jelly. I've mainly eaten it with a spoon out of the jar so far. Blush
