Roast vegetables. I fail every time. Help.

I have tried and failed so many time on this. DP has brought in from the garden.

Potatoes
Onions
Garlic
Carrots

Probably too late but I have ready to put in the oven the above items in a large baking tray and covered with rosemary and basil with three tablespoons of olive oil with basil and 200 mls of water and covered with tin foil.

They have been parboiled [but only for three minutes and are chopped into very large chunks] and the gammon will be ready in two hours.

So I shall put them in the oven in one hour from now.

They will come out as mush. I know!

Posting after the horse has bolted but the Jamie/Delia recepies have failed to help me here.

Where do I go wrong?

I wouldn't have added the water, just oil and some salt.

I stick mine in a baking tray and just turn them occasionally - I don't usually bother with parboiling and they are fine.

yes, no water.
just a little oil, maybe flour (if you want crispy potatoes), a little stock granules (or salt and herbs).
uncovered relatively low temperature, have fan assisted oven and use a setting between 150 and 175 so that the veg cook without charring.
timing arond 45 min, maybe more.

No water and no foil - then they steam rather than roast and will be mushy instead of crispy. Some oil or goose/duck fat. You can roll the spuds in a bit of semolina (dry not from the tin!) to make them extra crispy. I'd do the potatoes in a separate tin. Have you kept the garlic in its skin? I find potatoes take longer - and carrots can take a while. Why not look up roasting recipes for each thing separately and then see how you can stick it all together? Not a particular chef - just google 'roasting carrots' etc and see what you find. Good luck. Gammon is lovely.

A good way to get crispy roasties is to give them a good shake in a colander after par boiling, this creates a rough surface on the potato, add a bit of salt and oil/ fat and jobs a goodun.
I normally just chuck all veg in oven, no foil and turn occasionally. Agree that the water will make things mushy so good tehat you have taken it out.
Roasted carrots, yum!
