wedges?

is it just me or do others find their potato wedges stick to the oven tin? I coat them in olive oil, some salt and maybe some herbs and put them in the oven at about gas mark 7. lots stick - what I'm I doing wrong - do I need to use more oil more in the way you'd do roast potatoes?

I shuffle them around a couple of times whilst they're cooking. I also parboil them so they don't take so long to cook.

par boil or micro for a few mins, then don't attempt to turn them till they've had more than half their allocated oven time.

I cut my wedges, stick them on a plate and microwave for 3 mins, and then put in a baking tray which I've brushed well with oil.

I use spray oil, so not a lot. Certainly nowhere near as much as if I were doing roast potatoes.

I've found it makes a difference if I heat the baking tray first.

I heat an enamel tray. I cook the potatoes right through and break up in a colander. The crushed bits make then really crispy even without a lot of olive oil. I also find that they need to be quiet golden before you turn them. I need to find some large roasting bags to save on washing up.

Mine also stick :) I think the answer is to leave them as long as possible before expecting them to move about. Then again, burnt crispy bits of potato are also rather lovely .

Try lining your oven tray with some greaseproof paper.

right - using all your tips, cooked them in the microwave for a while, brushed the roasting pan with olive oil and heated it. Coated the wedges in a bowl with olive oil, salt/ peeper, and herbs and transferred to the roasting pan , turning them half way through. Perfect and not one stuck - thanks ladies!

I line my roasting tin with baking parchment - more effective than foil or greaseproof paper.

Chuck the baking tray with a little oil in the oven for a few mins before you put your wedges on them, so the tray is hot. Mine don't stick to it then.
