green tomatoes

I have a large bowl of green tomatoes which I have rescued from my garden in fear of frost. Any bright ideas as to how to use them up? I've had a quick look at the internet and seen a couple of soup recipes, has anyone tried this and did you like it?

I know you can make chutney but I've already made pounds and pounds of chutney so I'm not keen to do that.

I've just left mine (and there are loads) to ripen on a sunny? windowsill. Some are starting to turn and will just use them as they ripen daily.

According to Monty (Don) - sticking them in a brown paper bag together with a banana will speed up the ripening process.

Alternatively, a google search for a fried green tomatoes recipe?

My mum made super pies with our crop, one year when the frost came too early. I think she just treated them exactly like cooking apples, and they didn't need as much sugar as she expected. Unfortunately, that was about 25 years ago, and neither of us can remember exactly how she did it!

Put them in a plastic bag with a ripe tomato. The ripe tomato with give of a gas which helps fruit to ripen.

For fried green tomatoes, I slice the tomatoes thickly, coat with seasoned flour and fry until golden. Yummmmm and my son loves them, too. In fact, we use our first tomatoes of the year this way! (Sacrilege, I know.)

Try using them just as normal ripe tomatoes in recipies like ratatouille, spaghetti sauce etc, just adding a generous spoonful of sugar. Don't worry, it's just adding the natural sugar that the ripe ones get when they turn red. Mixing them in with (bought) ripe ones works best, I find, otherwise they can still taste a bit acid.

Thank you for all your ideas. I fried some of the tomatoes with fresh onion, ginger, garlic and coriander and they were yummy. I have red ones mixed in with the others to try and encourage them to do their ripening stuff.

I just can't bear to waste anything!
