caviar for xmas

DH was given some caviar on a recent trip to Moscow so we thought we'd have it on xmas day as a starter -- anybody know the correct accompaniments please?

Traditionally it is served with blinis (small buckwheat pancakes) and sour cream. Delicious - what type is it?

Ooh yummy. At a Vodka and Vaiar evening we went to the caviar was served straight onto the side of our hands, to eat off there.

If you are unfamiliar with making them I would buy them, you are supposed to use a special small pan to get the right size.

It is sevruga, apparently. And it is in the freezer atm as we were advised that that would be OK. I have only seen it in tins before but this stuff came in a plastic pot wrapped in clingfilm. I hope it is OK.

a really nice but odd way is with white chocolate - i've only ever used the 'fake' caviar stuff but bet it would be excellent with the real stuff. Melt white choc (i reckon green & blacks is best) and spoon onto greaseproof paper. when nearly set spoon on caviar then set solid. yum.
