Do you think it's wrong to cook onions and garlic together?

Not sure where/when or why I acquired this belief as doesn't seem to be shared by anyone much at all.

I've head onion and garlic referred to as "le roi et la reine de la cuisine" but don't know the saying about them not sharing the same throne. pan do you know the saying in French?

Oh I feel relieved, had forgotten that saying but now it is almost like actual proof that such a School of Thought exists. Even if it stops short of being an actual law and is nothing more than a disregarded (except by me) guideline.

malinois - years ago I did but time has taken it's toll on my brain. Too many other facts to fit in a very limited space!

What a shame for you, having only ever used one or the other for so many years! I don't actually like onion, and pick big bits out of food. When I left home for several years I never cooked with onion. When I married H I became convinced of the necessity of onion in most things (especially as I'm vegetarian) Food without onion is vastly inferior.

I must admit that I have stopped putting onion and garlic into everything without thought. So my spag bol has garlic but not onion and my favourite pasta sauce has onion but not garlic!

But for average, everyday cooking I use both, although agree with the previous posters who say cook onions and then add the garlic.

I remember watching a tv show a few years ago where Gino d'Acampo said that you should use one or the other and not both -and immediately thinking what rubbish! I think I use garlic and onion in everything I cook, and cumin too. Getting a bit obsessed with paprika lately....

I agree with BIWI. My household would live on bread and scrape if I didn't cook onions and garlic together.

Spag bol - first fry onions and garlic...
sausage and mash - first fry onions and garlic...
roast potatoes - first fry onions and garlic...
Fish pie - first fry onions and garlic... Wink

Asked a chef this morning who confirmed it is technically (or for purists anyway) considered Wrong for French and Italian dishes - even though everyone does it and many recipes now include both traditionally they wouldn't. Wish had asked her ages ago, was seriously worried about myself for a while!

She did say although she includes them both in dishes she would never cook them together though, not at same time.

I sometimes start a dish by pureeing raw onions, garlic and ginger and then frying the puree. How d'ya like THEM onions apples?

I don't use them together for the most part. Read it somewhere in relation to Italian cuisine and decided that you don't usually need both to get good flavour. I like keeping things simple too and peeling both onions and garlic is a PITA
Having said that I will mix them when a particular recipe calls for it.

maybe the ginger cancels out whatever is wrong about combining onions with garlic? making me hungry to think about it, is there an aubergine recipe you can share?

and if someone called gastrognome has heard about it too and generally abstains from the practice it must definitely be true
