As part of a Christmas present I am hoping putting together a collection of soup recipes, to be laminated and put in a file. It is to go with other related stuff.

So could you all help me please?

What are your favourite soup recipes?
And what are the cooking instructions?

I get a bag of cassorole veg ie, carrots, onion, cauliflower, swede, and potato, cook them till soft with a vegetable oxo, (can't remember how much water you need sorry, I just judge that now) then blend with a mixer and stir in (loads) of fresh cream... bloody lovely...MMmmmm

smoked haddock chowder

piece of smoked haddock
one white onion
touch of cream
2 medium white potatoes
black pepper

poach the fish, retain the cooking liquid. boil the potatos. coften the onion (do not brown) . stick it all in a pan together, bring to simmer. take out some of the fish and potatoes (about half) and blend. return to pan. add the cream and pepper. its ready

BUTTERNUT SQUASH

SLice in half and remove pips
drizzle with olive oil
Roast in oven so that you can remove the skin
Thicken with some leftover Mashed potatoe
Add salt and pepper
Add a dollop of creme fraiche and toasted pine nuts

Bloomin easy .....

I am seeing her on Christmas Eve and that is when I will be taking pressies over - so will be poutting it all together that week

chestnut soup
get a bag of frozen chestnuts, defrost, add to 2 chopped and sweated onions, fry for a bit, add pint or so of stock (pref chicken), simmer until chestnuts are softening a bit, get in there with handheld blender, add single cream, salt and pepper

Here is it is:

CARROT & CORIANDER SOUP

Serves 4.

50 gm (2 oz) butter
2 leeks, sliced
450 gm (1 lb) carrots, sliced
15 ml (1 tbsp) ground coriander
1.2 litres (2 pints) chicken stock (2 oxo cubes per pint)
150 ml (¼ pint) Greek-style yoghurt
salt & ground black pepper
30-45 ml (2-3 tbsp) chopped fresh coriander

  1. Melt the butter in a large saucepan. Add the leeks and carrots and stir well, coating the vegetable pieces with the butter. Cover with a tight-fitting lid and cook for about 10 minutes, until the vegetables are beginning to soften but not colour.

  2. Stir in the ground coriander and cook for about 1 minute. Pour in the stock and season to taste with salt and pepper. Bring to the boil, cover and simmer for about 20 minutes, until the leaks and carrots are tender.

  3. Leave to cool slightly, then purée the soup in a blender until smooth. Return the soup to the pan and add about 30 ml/2 tbsp of the yoghurt, then taste the soup and adjust the seasoning again to taste. Reheat gently but do not boil.

  4. Ladle the soup into bowls and put a spoonful of the remaining yoghurt in the centre of each. Scatter over the coriander and serve immediately.

Chicken Soup

(sorry but i never know exactly how much I use of anything so I'm just guessing!!! shouldn't make much difference )

assorted chicken pieces (I usually throw in maybe 2 thighs and a 2-4 legs b/c the kids like dark meat better but could use breasts too)
a bunch of fresh parsley
1 large onion - with skin still on
2 sticks celery - try to get some leafy bits in too
3-4 carrots peeled & diced
1-2 TBSP powder soup mix or stock cubes
1 small tin butter beans
1 pack narrow egg noodles

Heat a little veg oil in a large soup pot and place the chicken pieces in skin side down just to colour slightly (~5 min). Add the parsley and all the veg and cover with 2-3 litres of water and bring to the boil. Add soup mix or stock cubes and let simmer for 1-2 hours, occassionally skimming any scum off the top.

Remove the onion, celery and parsley and discard. Remove the chicken pieces and discard the skin and bones, returning the meat to the soup. Add butter beans and simmer for another 10-15 minutes until beans are soft. Add cooked noodles when ready to serve.

This recipe requires a while to cook but isn't actually at all difficult. (otherwise I wouldn't be making it!!!)

How far in advance can you cook soup and freeze it?

this is yummy

put into a sauce pan:

1 chopped onion
2 cloves garlic, crushed
1 chopped green pepper
1 chopped red pepper
1 chopped courgette
1 tin chopped tomatoes
2 tsps or so of dried mixed herbs
1 litre stock
salt (not too much cos will be lots in stock) and
pepper - lots

Bring it to the boil and let is simmer for hour or
so until veggies are soft.

Whizz up with the blender.
When ready to eat, bring back to boil and add a couple of handfuls of soup pasta (Farfalinni ?) and a tin of beans - the Sainsbury's mixed pulses is nice and cook until pasta is cooked (about 4 mins)

Really nice with grated parmesan on top.

Enjoy - great Christmas present!

Thank you everyone. All are written up now. Also going in the pack is a really lovely pastel pink mini bean/soup pot, the Jamie Oliver Flavour Shaker and a few Food magazines. She loves cooking, and her staple lunch time meal is soup
