Anyone make their own burgers?

I'd like to have a go at making my own burgers - does anyone have any good recipes or advice?

I want to serve them with some lovely, chunky, homemade chips and some of relish. I'm thinking maybe a lamb and mint burger, but am definitely open to suggestions.

In fact I started adapting JOs meatballs recipe. Before I had used breadcrumbs but he suggests crackers

You could do a beef burger with a lump of blue cheese in the middle as a surprise!

I would mix lamb with pork or beef. I dont use bread crumbs or crackers a squeeze of tom puree or ketch up and an egg yolk or two will hold it together just fine.

I do, don't use breadcrumbs though, just mince, seasoning, herbs and egg, lots of squashing togther with fingers and shaping with hands. V Yummy!

I use a metal pastry cutter to make the shape of the burgers - it looks very professional

Grin I made lamb burgers tonight! I usually do lamb kebabs as part of my 2wk recipe rota but forgot skewers.

1/2 tsp of each: cumin, coriander, turmeric, dried mint. Salt, pepper.
Chuck in a mixing bowl with a spoon of olive oil, mix to a paste
Chuck in a pack of lamb mince
Mash through with a fork until a nice texture
Add 1/2 a beaten egg
Add 1 slice grated bread
Mash together

Voila - shape into burgers or along skewers for kebabs.

You can do without the egg and bread but it does help bind them.

Serve with pitta bread, salad and lots of tzatziki - mix 2 diced garlic cloves with 1 diced cucumber and a big pot of Greek yog, salt and pepper, chill while you're making the kebabs.

Burgers are easy peasy.

Plenty of seasoning, herbs, an egg. Not breadcrumbs. Can't go wrong.

I like pork and sage ones.

Pack of mince. Egg. Mix, compress, fry. YUM!!

If you're feeling fancy, add half a very finely chopped onion and some herbs and seasoning. With decent mince, you don't really need it.

I like turkey burgers - healthy option.

Turkey mince, egg, soy sauce, onion, ginger and bit of chilli

I fry, but with no oil in a non-stick pan. means you can turn it into bolognaise sauce if it falls apart Blush

mince, 1 onion (finely chopped), oxo cube (crumbled), grated cheese, 1 egg yolk.
Mix and squeeze together. Pat and roll in flour.
Grill for 20mins. Grilled bacon and slice of cheese on top. Melt and serve.

Makes 4 large/ 6 reasonable sized.

You can also put some grated parmesan in the mix to add a bit more flavour and help bind it.

I make the kids chicken burgers by chucking 1 onion and 4 chicken breasts in a food processor, shaping and roll in flour and fry

All the time! For each pack of 400gr of meat its one big dollop of tom ketchup, one raw egg (mixed with a fork), lots herbs and a chopped onion.

People drool over them. No idea why as its so flippin simple.

And yes, you grill ( otherwise you will whipped and spanked by MNHQ)

I grill my lamb ones (or barbecue). 10 mins each side on a high heat does the trick.
