What Does One do with a Massive Courgette? (oo-er!)

Have just been given a MAHOOSIVE courgette, the size of a small newborn baby, by my mum from her vegetable patch.
What can I do with it??
Thought about courgette soup but is it very tasty?
Thought about stuffing it but with what?

It's a marrow really, isn't it?

I would use half in a courgette and bacon pasta dish and freeze some containers of it.

You could also chargrill some slices - just brush with olive oil, black pepper and salt. Then after griddling, add lemon juice and a little white wine vinegar and some more olive oil. Will keep nicely in the fridge.

Courgette and cheddar soup or courgette and parmesan soup is very nice too.

You need a strongly flavoured cheese to marry it with, imho.

As per usual, I'm embarking on my summer glut of courgettes at this time of year so need more ideas.

Like the idea of cake too.

Nigel Slater also has a good chocolate courgette cake recipe, I believe.

Cut nearly in half, stuff with blue cheese and walnuts or goats cheese and raisins, anything you fancy really. put back together, coat the outside with olive oil and throw directly on to bbq coals. Don't over do as it can go soggy. Or chuck in oven.

Just be aware that large courgettes/marrows are more watery than regular sized ones so you might need to adjust the recipe slightly.

Cut in half, lengthway - Scoop the inside out - fill both halves with a sausage mix - join both halves - tie a bit of string to make it like a roast - in the oven for about 45 mn - slice nice thick round slices, serve with rice & a quick tomato sauce (chopped tomatoes + onion + garlice + herb de provence) makes for a lovely summer's dish

Slice up, scoop out the seedy middle bit from each slice, lay out in a roasting tin. Fill each hollow with a (already made/leftover) bolognese sauce, cover each roundel with cheese (grated parmesan, cheddar or anything that grills well). Roast in oven for 20 mins.

Serve a couple of slices per person, plus a salad and bread. Delicious. Works nicely with other saucy stuffings too.
