Drizzle of olive oil?

IroningBoardForSurfBoard · 11/07/2011 18:16

it's meant to be slightly sticky, so the sauce soaks in.

what are you making?

gregssausageroll · 11/07/2011 18:34

I want cold pasta for lunch tomorrow but need to cook tonight.

Are you slightly overcooking the pasta?

Alibabaandthe80nappies · 11/07/2011 18:36

Douse it in cold water as soon as it is cooked. The rapid cooling process stops the starch gluing together.

posibly nomore. Wil check and try the cold water.

A little oil in the water as you boil it and don't overcook it.

IroningBoardForSurfBoard · 11/07/2011 18:39

agree with flashing it into icy water after cooking, and keep it moving whilst you drain it

Take out about 1/2 cup of water just before you drain the pasta, then add a little of it back into the pan as soon as it's drained. It will help keep the bits separate, but keeps the heat unlike cold water and also helps the sauce to cling to the pasta.

Always add the sauce to the pasta in the pan and mix through then serve, don't serve pasta in bowls then sauce on top.

Try the cold water, immerse until it cools, then drain.

If serving immediately I usually stir in a little bit of butter, about a teaspoon, but I don't know if this would make it weird for the next day.

You need to run it under cold water as soon as it is cooked. You can add a tiny bit of olive oil which helps too :)
