Nut roast, or something similar

I want to give my carnivorous family something different to eat. I like nut roasts, and all those other ready-made or packet-mix veggie specialities, but they are all so salty that I don't like to give them to my children.

Can I maek these sorts of things at home, without using packet mixes?

I make a very tasty nut loaf, but afraid I don't use a recipe so amounts are vague! I fry onions and mushrooms, then mix with copious amounts of ground nuts - cashews, walnuts, brazils, almonds, etc, and a good quantity of cooked brown rice. Add herbs, soy sauce, tomato puree, paprika, whatever really, and a stock cube mixed with enough water to make a few tbsp of sludge, to make it less dry.

Bake in a medium oven for about 1 to 2 hours, depending on how large it has turned out. It's lovely with a well-cooked crust on the outside, and quite moist and firm inside.

You could fry up whatever tasty veg you have and put them in, or add curry powder, or garlic, to suit your family's tastes.

We make a vegetarian roast thing, but it's with rice, filo pastry, leeks, mushrooms, currants, almonds, feta and cheddar. It's a bit salty, with the feta, but very tasty. Bit fiddly, with the filo.

I should try making nut roast, as we're (somewhat) reducing our meat intake, maybe.

We make a basic nut roast mix by whizzing up mixed nuts (get a packet which doesn't include peanuts IMO they can make it taste a little bitter) in a processor..adding the same quantity of whizzed up brown bread crumbs, about half the quantity of grated cheese and bind it with an egg.
We bake it as 'nutty balls' (stop sniggering now), or use it to stuff marrow (yum) or peppers.

Ooh Bluebear, that sound a good idea - I've been fancying a stuffed marrow.

Thanks F&Z, I don't mind vague recipes (dh always jokes that I never follow the recipes anyway!) as long as yo don't mind me asking a few questions. When you say 'ground nuts' do you mean ground to a paste, as in peanut butter, or chopped up, as in the sort you add to cakes? Do you put it in a greased loaf-tin, or just pat it into shape on a tray.

what does everyone eat with nut roast? am tempted but not sure, but we are trying to reduce our meat intake as well.

PrettyCandles, I grind them up in either the nut attachment that comes with the blender, or the coffee grinder. I think it would be ok if you just chopped them, but I serve it to ds (2.5) as well so I make sure there are no chunks in ours.

As to what we eat with it - in winter, or for hungry people, we have roast potatoes and parsnips etc and veggie gravy. In summer, or for a more healthy meal we have new potatoes, green beans, broccoli etc. and a simple tomato sauce.
