Does anyone have a recipe for carbonara type pasta sauce thats low fat? Love the taste but too much fat in bought sauces. Or are there any low fat brands I've missed?

it's not quite the same, but you can make it with normal cheese sauce instead of cream/egg/cheese.

It's the fat that gives it the taste i'm afraid!

waitrose have a perfectly balanced one that is much lower in fat. However it seems to be much thinner and not as tasty (but that tends to be the problem with low fat!!)
No idea on a receipe though - can you just substitute low fat versions for the cream etc?

mandylifeboats · 19/11/2005 18:36

I sometimes use the low fat type Campbells soup and add bits, thats a fair substitute, but not quite right

I use a good non-stick pan to fry the bacon bits, and a red onion. Then I add 'Laughing Cow' triangles. Really tasty, but not the same as the real thing I'm afraid!

I use the low fat single cream from asda.

trim the bacon carefully to remove fat, dry fry with chopped shallots and minced garlic till shallots are transluscent, add cream then add spinach / brocolli flowers /petits pois / whatever you fancy or nothing green.

Add grated parmesan and a little ground or grated nutmeg and black pepper.

YUM!

You don't need to add cream to make a carbonara although all comercial recipes have it.
I make the Nigella recipe from How to Eat and that only has egg and cheese. You whisk in the egg and cheese mixture over the pasta once it is cooked and the heat of the pasta cooks the sauce. It is yum.

If you need the proper recipe let me know and i will post it. I wouldn't say it was low fat but it doesn't have cream so it's lower than normal.

I gave up as I found making it with skimmed milk was just gross, as were all of the low fat ones I tried.
I moved on to arrabiata instead

ooh maudy yes pls!!

gingerbear · 22/11/2005 09:23

hello Hazlinh, not seen your name on here for ages.

I use cambells mushroom soup with crispy bacon added to it. (not strictly carbonara I know)

Tommy · 22/11/2005 09:32

how about this from WeightWatchers?
Haven't tried it but may be ok.

jambuttie · 22/11/2005 09:47

i buy apacket of colemans pasta bacon mix and add in mushroom and onion delicious

cardy · 22/11/2005 10:12

I used low fat creme fraiche. Or you could use Quark. The bacon and grated parmesan give it plenty of flavour

cardy · 22/11/2005 10:15

i suppose that is cheating though.
