vegeatian roast meal

have a fish eating veggie pal coming on Sunday (a different one to last time!!) and need to do a chicken so baby can have roast meal whizzed up for days and the other two eat real meat once a week!.

What can I roast for her for her to have as meat substitute? Cod? will it go with the vegetables?

Codswallop - Salmon fillet is easy and liked by most - just cover in butter, lemon, salt and pepper, wrap in tinfoil and pop in the oven.

How about getting some Haloumi cheese, dip in a little flour and grill/fry it until it's brown on both sides and serve with a sweet chilli sauce (bottled from supermarket of course!). Takes 2/3 mins, tastes lovely and looks like some really trendy veggie meal. The cheese doesn't just melt away, it keeps it's shape really well.

You can get quorn roast, usually found in the veggie section of the freezer in larger supermarkets. It looks a bit like a rolled chicken roast type thing, you roast it in its cellophane and then just slice it. It tastes a bit like very lean chicken roll. My kids love it and I like it too. You can use up leftovers in any way you would use chicken leftovers.

Coddy I have a fab recipe for a Fish based casserole - never fails - Called Beachcomber casserole - it's all swordfish, red peppers and coconut cream!

my parents (only roast eaters we know) get some ready made rissole or some such for dp. He likes it cos we never have stuff like that at home. Alternatively, what about a tart, such as Tescos finest roast veg tart - everyone else will want some too.

Janster I personally wouldn't get a quorn 'meat tasting' type thingy. It might just be me, but as a veggie I cannot stand the taste of fake meat. If they eat fish then roast cod would be great, you can slow roast it but you need a low heat which which bugger up the rest of the stuff. I would go with roasted butternut squash and other veggies, with a ymmy veggie gravey (very lazy onion gravy with loads of red wine!) This is what I am planning for me on sunday when I do roast beef for everyone else, with all the trimmings!

As a veggie I often have all the yummy vegetables, stuffing and so on with a port gravy and forget the "meat substitute" but I also can recommend the quorn roast or how about a scrumptious portabello mushroom filled with pesto and parmesan and roasted?

I like just to have the vegetables - with cauliflower cheese and cranberry sauce if I am lucky....

I'm getting hungry, all of my favourites are here already. Nut roast is my preference, followed by a selection of roasted veg a la Crunchie(never tried that with roast spuds though, would it be a bit heavy? We normally do it with cous cous...I suppose no heavier than a roast meat).
Do check if you decide on quorn stuff - its quick and easy, but either loved or hated by most veggies I know. Rissoles etc as suggested by Fisil are great - often you can get really nice ones individually from delis rather than a box of them from the supermarket. Like the roasted tarts too, Sainsbury's do little individual ones in the chill cabinet. Wedgiesmum, I'm trying yours tommorrow. Sounds great!

Have to say that I hate nut roast! When I do a roast for DH and DD I sometimes just get myself a big yorkshire pudding and fill it with all the veggies, some onion gravy and top it with cheesy mash - finished off in oven. I like that as much as any substitute.

If doing fish for her to go with your roast then I would think a meaty type fish might be best. Why not ask the person at the fish counter what they recommend goes with the rest of your meal?
